Keeping Bulk Jule's Flour.

Jule's says the flour has a shelf life of 18 months. I plan to buy Udi's bread so the only flour I will use will be for sweets, mostly. I can't allow myself to bake a lot of goodies because I have very poor will power and always chow down on anything "good." The shipping to NY is costly and all I really want to order is a 5 pound bag. If I buy 6 bags, 30 pounds, I get free shipping. However, I really need to use that flour slowly. Has anyone had a bad experience keeping this flour for a long time. Would freezing work? Thanks.

Jules flour is made up almost exclusively of starches, which last pretty much indefinitely on the shelf. The only ingredient in it which has a shorter shelf life is the corn flour. If you keep it in an airtight container , you will have no problem with it going bad before its stated 18 months. You can freeze it if you want, but it really isn't necessary. If you feel safer doing so, and you have the space, you might keep out the one bag you are using and freeze the rest.

Ask your local health food store to order some for you or contact your local celiac group to see if there are a few other people who would like to put in an order. It never hurts to ask.

      They may want to also eliminate other possible causes for your symptoms/issues and are doing additional tests.  Here is info about blood tests for celiac disease--if positive an endoscopy where biopsies of your intestinal villi are taken to confirm is the typical follow up.

      In the Europe the new protocol for making a celiac disease diagnosis in children is if their tTg-IgA (tissue transglutaminase IgA) levels are 10 times or above the positive level for celiac disease--and you are above that level. According to the latest research, if the blood test results are at certain high levels that range between 5-10 times the reference range for a positive celiac disease diagnosis, it may not be necessary to confirm the results using an endoscopy/biopsy: Blood Test Alone Can Diagnose Celiac Disease in Most Children and Adults TGA-IgA at or Above Five Times Normal Limit in Kids Indicates Celiac Disease in Nearly All Cases No More Biopsies to Diagnose Celiac Disease in Children! May I ask why you've had so many past tTg-IgA tests done, and many of them seem to have been done 3 times during short time intervals?

      This may sound ridiculous but is this supposed to say Celiacs? I looked up Coeliacs because you never know, there’s a lot of diseases related to a disease that they come up with similar names for. It’s probably meant to say Celiacs but I just wanted to confirm.

      I was told it was to see how much damage has been caused. But just told CT with contrast not any other name for it.
