Hello,

I am newly diagnosed with celiac as of today. I'm still trying to come to terms with what my new diet will mean. My biggest hobby is baking and cake/cookie decorating and now I need to figure out a new way to do this. My daughter's 3rd birthday is in a few weeks and I need a good gluten free cake recipe I can use in a Wilton shaped cake pan. Hopefully, one that people on a regular diet would enjoy too. I also make cut-out sugar cookies as favors, so I'm hoping someone can give me a tried and true recipe that works well.

For the sugar cookie mix, I highly suggest using gluten free mama sugar cookie mix. :-) Best of luck.

I posted a really good sugar cookie recipe under the baking section of this site. I believe the thread is called "Amazing Christmas Recipe", but I'm not totally sure. They are super easy to make!

As for cake, I like Pamela's but some people seem to have problems with it. Kinnikinnick white cake mix is good too.

Karen, here's the one everyone seems to like on this board. I just copied and hopefully it will paste:

I use this sugar cookie recipe from Gluten free cookie school. They're really good. The best part is that you can be flexible. I made DH these cookies with m&m's in them.

Gluten Free Sugar Cookies

1 c. sugar

1 c. butter (2 sticks)

1 egg

2 1/2 c. Gluten Free Flour All Purpose Flour Mix

1 tsp. baking soda

1/4 tsp. cinnamon (optional)

1. Cream the sugar and butter (for further direction click here).

2. With the mixer still on medium speed, add the egg. Mix until well combined.

3. Sift the Gluten Free Flour Mix, baking soda and cinnamon.

4. Add the dry ingredients to the batter and mix well.

5. Shape the dough into a ball and place between two sheets of wax paper that have been very lightly floured. Flatten the ball a bit, and then roll out the dough until it is 1/8 inch thick. (more on this next week, if you

Here's the Amazing one...

After some experiment, the recipe is perfected. My gluten-eating friends have all requested that I bring these to every gathering, and many of them took the recipe as well!

1 cup sugar

3/4 cup butter (CF-margarine)

2 eggs

1 tsp vanilla

Cream the above together, then stir in

2.5 cup Kinnikinnick cookie mix

Roll between parchment paper (can be dusted with the cookie mix), cut into your favorite shapes

Bake at 350*F for 8-10 minutes, until lightly browned on edges.

Ice with your favorite icing, let harden.

Yummy, and look good too!

I gotta say - I combined a little of the two recipes, used a mix of Tom Sawyer and Sweet Sorghum flour, and they came out darn good. A little icing, and voila - Eat N Park, eat your smilie-faced heart out. Great recipe! Thanks!

I have added a few cakes here for you. Let me know if there is a specific flavour you are looking for. I am the official baker amongst my friends (2 of us have celiac disease) and they love my cakes.

Here is a chocolate cake recipe that is pretty popular at my house.

Gluten Free Chocolate Cake

1/2 cup sorghum flour

1/2 cup tapioca flour

1/2 cup rice flour

1 cup cocoa, sifted

1/2 teaspoon baking soda

2 1/2 teaspoons baking powder

1 1/2 teaspoons xanthan gum

3/4 cup salted butter, room temperature (if you use unsalted, add 1/2 teaspoon of salt to the dry ingredients)

3/4 cup brown sugar

1 cup granulated sugar

3 large eggs

2 egg yolks

2 teaspoons vanilla

1 1/2 cups buttermilk

      Thanks very interesting I have to see if I should take these 2 vitamins along with my multi and super Vit B complex or if its too much or would hurt me. I don't have any other health issues but would love to see if this improves anything especially to feel stronger build muscle.

      Yes, I have noticed a big difference.  I had serious malnutrition symptoms that my doctors couldn't figure out, so they blamed me, said I was "depressed" and washed their hands of me.  At home, I could feel myself dying, and, with nothing left to lose, I relied on knowledge from my microbiology and nutrition classes at university.  I went gluten free.  I started taking vitamins according to my nutritional deficiency symptoms.  Vitamins worked.  My health improved.  Now I'm here to help others.  Celiac disease causes malabsorption which results in malnutrition.  Doctors don't recognize the symptoms of Celiac disease and malnutrition. Benfotiamine has been shown to promote intestinal healing and digestion, improves diabetes and neuropathy and much more.  TTFD (Thiamax or TTFD-B1 Max) helps with brain function, neuropathy and lots more.  Every cell in the body needs thiamine to make energy so the cell can function.  Without sufficient thiamine, mitochondria die.  Every cell also needs thiamine and the other B vitamins to make life sustaining enzymes.  Thiamine has antiviral and antibacterial properties.   We may not be getting sufficient thiamine from our diets if we eat a lot of carbohydrates.  The more carbs one eats the more thiamine is needed to process them into energy.  If there's insufficient thiamine, the body stores the carbs as fat.       Yes, I would be good with the diagnosis.  While NCGS isn't a malabsorptive disease like celiac disease, inflammation and restricted diets can impact Vitamin D levels.  Recovery from either disease requires avoiding gluten.  celiac disease may take a longer recovery than NCGS because in celiac disease there is intestional damage to the cilia that has to self repair in addition to the nutritional deficiencies.   Nonceliac Gluten Sensitivity Dr. Weston Price's research in the 1930s showed that diets rich in minerals and fat-soluble vitamins (A, D3, K2) promoted well-mineralized teeth, while deficiencies led to weaker enamel. Fatty liver, Intermittent diarrhea, Severe abdominal distension Choline deficiency causes abnormal deposition of fat in the liver, which results in a condition called nonalcoholic fatty liver disease.
