I used 2 lbs ground beef, 2 cans black olives (I sliced them), bell peppers, onions, and pepper jack and cheddar cheeses. Outstanding.

I made this one last weekend and am making it again tomorrow. Works great with sour cream and hot sauce (if you can handle them).

Oh, I used La Banderita corn tortillas with ZERO gut issues if yall were wondering....Oh, and don't hate on the musings of a Southern Gent. ;p

I love those kinds of casseroles (except for olives), looks great! I like green onions and chopped tomatoes in place of olives. Thought I might add for the newbies...you could use rice lasagna if you can't have corn. My dh doesn't like "spicy" food so I don't make mexican type things anymore :( We just have low spice tacos/nachos instead. I am drooling over the photo on that link! :lol: mmm...

This one wasn't spicy at all to me....I even had to add a LOT of hot sauce.....It seemed more tomato'ey to me. But yeah, that pic is niiiiicccceeee....

      Hello. How are you feeling? Did you find out the cause? I have the same symptoms, but I'm still going through the diagnostic process for celiac disease.

      I'm confused about these results. We are not seeing the GI doc. He's totally out of our price range. We can just do gluten free like we do for my daughter who was off the charts on all of these. Any thoughts? Maybe we caught it early? He's only 5.  His EMA was negative. That got cut out of the photo.
