Reynold'S Foil Muffin 'Papers' - No Muffin Pan Needed

I recently tried some of the large Reynold's foil muffin papers, although since they're not paper I'm not sure what they're called - but you don't need to use a muffin pan - they stand up by themselves on a cookie sheet - which is great because all my muffin pans have old residue that I would never trust, even if I have papers, because the muffin tops spill over onto the pans. Great thing for gluten-free cooking in a shared kitchen!

I made Betty Crocker devil's food cake large cupcakes, topped and filled them with some cream cheese/powdered sugar/cool whip topping, froze them until the frosting was hard, put each cupcake in a baggie, and stored them in my freezer for easy gluten-free snacks for me. They thaw on the counter in just 10-20 minutes - in fact they taste great when they're still very chilled. (I like having some baked desserts in the freezer for me, that way when my boys are munching on an oreo I don't feel deprived.)

The topic has come up in the forum a lot: https://www.celiac.com/search/?q=lymphocytic colitis&quick=1&type=forums_topic and here are discussions with "colitis": https://www.celiac.com/search/?&q=colitis&type=forums_topic&quick=1&search_and_or=and&sortby=relevancy

I’m in a flare up with rib pain. I read where others have experienced this after exposure to gluten.  Has anyone found something that eases the pain.

Scott Adams/Trents - Thanks!  I will definitely do some more research.  I welcome any and all advice.

Yes, I've read that online but I was just surprised that no one has mentioned it on this forum specifically.  We have not had our follow up meeting with the Dr where I'm sure she will advise as to how he needs to deal with this ailment.  I have learned from past health issues - if you want to find the REAL truth - talk to someone living with the disease.  THEY will know way more than any doctor ever could.    Thanks for responding.
