My daughter has a friend whose mother (Jessica) owns a pizza/Italian restaurant. Jessica says people often ask if they can provide gluten-free foods and pizza, but they aren't too sure how to do that safely because they have a small kitchen and worry about x-contamination. Are there any resources for this I can send to her? Are there other good resources to give to restaurants to help them safely give people gluten-free meals - eg how to really set up their kitchens. I find there is interest but many managers aren't that familiar with it.

They provide gluten-free pizza crusts for The Mellow Mushroom and many other pizza places. I believe they also give info to their vendors on how to avoid cross contamination.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
