gluten-free Hamburger Buns?

The Grainless Baker makes a really good hamburger bun. I order them at www.thegrainlessbaker.com. They also make a really good baguette that I use for garlic toast and for dipping in seasoned olive oil. I have served the baguettes to company and been asked "I thought you couldn't eat bread," so nobody knew they were gluten-free.

I've made gluten-free hamburger buns using all of my previously posted (in other threads) bread recipes. I cheat and use a "muffin tops" pan, which gives me perfectly formed round buns every time. (Use some water on your fingers to shape them after dropping the dough onto the pan.)

For what it's worth, the King Arthur flour catalog offers hot dog bun pans at various times through out the year. I keep meaning to buy one, but never think about it when I have extra money.

Thank you Laura. I just made the buns, they came out tasty, but more like biscuits than buns. What is the 'muffin tops' pan? Is that how they are sold? I did not have them and just tried to shape them, but they kind of flattened themselves out a bit. Definitely need something to shape them. I tried making rings with foil, as someone else suggesting and those came out better, but I ran out of foil. The foil also stuck to the buns and peeled away a little of the outside and those really looked like biscuits. But tasty little guys.

This was my first use of my kitchen aid mixer and I can tell you...I LOVE THAT THING!! Where has it been all my life? ha ha

I started using the muffin pans because the gluten-free doughs just don't have the structure to be freeform buns. I always make dinner type rolls in my regular or mini muffin tins.

Muffin top pans are exactly that. Very shallow muffin tins that allow you to end up with muffin tops but no muffin bottoms.

I bought two, and use them for DH's buns all the time. They could also be used to bake "english muffins" if you sprinkle corn meal in before adding the dough and then sprinkle the tops with more corn meal.

I purchased a muffin top pan at Bed Bath and Beyond, but all stores may not carry them. English muffin rings are also sold at Bed Bath and Beyond, saw some a few weeks ago, but the store was in Colorado Springs, CO.

Check your supermarket Asian food area for Dynasty brand Sliced Bamboo Shoots or another brand. They use the old style can that can be cut on the top and bottom with a can opener,and you can use it as a sturdy ring. Tuna fish cans used to be able to be used for this purpose, but they now have the newer cans that cannot be opened at both ends. Also check your supermarket for disposable foil baking supplies, they may sell a 4" disposable foil round pan that could be used.

LaChoy brand sliced water chestnuts also has a can that will substitute as a ring. The cans only measure 3 1/4" across....some people might prefer a 4" bun,tho, so this size may be too small. Great for sliders.

Even better, but a bit more expensive are Wilton Excelle Elite 4" x 1 3/4" Springform pans. I used to purchase them one at a time at Michael's Crafts and used a 40% off coupon a few years ago....haven't seen them lately, but they can be ordered online ...google them.

Thanks! Our Michael's is right next to our bed bath & beyond and I need new little load pans and other baking things, since I USED to us the pampered chef stone ones, and I know with the years of illegal foods baked on them, there will be no getting that out!

Thanks! Our Michael's is right next to our bed bath & beyond and I need new little load pans and other baking things, since I USED to us the pampered chef stone ones, and I know with the years of illegal foods baked on them, there will be no getting that out!

Had to cheat yesterday, if we wanted to eat and am hurting all night and this am still! What do you do when you are kind of isolated and food is served and you have no control over it?

I make sure I go straight home after eating elsewhere. I'm soy,dairy,wheat intolerant...severely. My dear daughter-in-law made mashed potatoes for a meal, used rice milk, but apparently used butter or margarine. The steaks were marinated in soy sauce, so my husband went out to get separate steaks for us.She never knew I got sick, and she will never know. We are presently traveling to visit many relatives over the next few months, and they have all been told "no food". Potluck, yes, I can bring many things that we all can enjoy. A relative just learned his daughter is gluten intolerant....so now he is getting a good lesson from his daughter...and he is admitting...gee, I never thought it was such a big problem, now I know.

I've never asked a Doctor for something for pain.....I know it will go away in a few days. I keep a liquid laxative on hand that is very quick working, so I can get food out of my system as fast as possible if need be. I'm retired, and never would have been able to handle this problem easily during my working days, for sure.

Next week I will try the recipe for hamburger buns.

Thank you again, Yes, this may be a greater problem when there is already prepared foods. We are finding this out as school starts back up and all those activities and such that have people bringing foods and we have no control over it. Far from having a small refrigerator and hotplate in my car! lol

      This treatment looks promising. Its aim is to provoke immune tolerance of gluten, possibly curing the disease. It passed the phase 2 trial with flying colours, and I came across a post on Reddit by one of the study volunteers.       Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.
