I Love My New gluten-free Cookbook!

I love my new gluten-free cookbook! This morning I made possibly the world's best pancakes from a recipe in it. My family says these were better than glutened pancakes! I replaced the milk with vanilla soy milk and added a handful of chocolate chips. The cookbook title is "Artisinal Gluten Free Cooking" and I believe it was only about $12 on amaz... Just sharing...

I have that cookbook and it really is amazing! Pumpkin muffins, brownies, & chicken pad thai are good too.

I agree, this cookbook is wonderful. Blueberry muffins were yummy as well as some of the entree dishes. Looking forward to trying the pancakes after your rave review - did they come out thick or thin? I like mine on the thin side.

Hi guys. I made these again this morning and panicked after I poured the batter onto the griddle because I had forgotten to add the melted butter! I held my breath as I fed them to my kids and ate one myself. Would you believe they were still great??? I'd say they were missing a little depth of flavor but I think the texture was even better (less dense, more fluffy) without the butter. I might try half of what the recipe calls for next time. I do put down some Earth Balance (Trader Joe's version of Smart Balance, which, by the way, tastes even better than Smart Balance) on the griddle and let them sizzle a little in that, so that could have made up a little for the left-out butter. I am making the chocolate chip cookie recipe from this cookbook today, using the same artisinal flour mix so I will come back and post . . . in case anyone cares how it is! :)

      What Thiamine Hydrochloride brand do you take? Is it like the other vitamins I have added? What brand Tryptophan and amount do you take. Thanks

      I would not think store bought yogurt would contain gluten unless it possibly could be through an added flavoring or coloring ingredient. Otherwise, it should be naturally gluten free.  Keep in mind that some companies are capitalizing on people's fears and ignorance (nothing personal intended) by labeling foods "gluten free" that are just that way by the nature of what they are. They are hoping to create a marketing edge over their competitors by adding "gluten free" because they know it may catch attention of those new to the celiac/gluten sensitivity experience without having to cost them anything in the way of changing their manufacturing process or doing testing.

      I believe the GFCO does use a common logo for certified gluten free products (those containing not more that 10ppm of gluten) but nothing universal yet from the FDA for standard gluten free products (those containing not more that 20ppm).

      I have a One Pot and decided to start using it one day. I was hesitant at first making my own yogurt, but was surprised at how easy it was. I like mine better too.

      Because I spend so much time reading every word on all food packaging, I personally would greatly appreciate it if there was one common gluten-free symbol written in large-enough text, and always located in the same place. That alone will make shopping easier and faster. I dread having to buy packaged food. Thank you very much for asking,
