Easy Fantastic Pumpkin Dessert

Pumpkin Dump Cake (topping needs to be revised to make gluten free)

1 29-oz. can pure pumpkin

1 12-oz. can evaporated milk (I plan to use unsweetened coconut milk instead)

3 eggs

1 c. sugar

1 tsp. salt

3 tsp. cinnamon

Topping:

1/2 box yellow cake mix (or buy a small box of Jiffy brand for an 8" cake)

1 c. chopped pecans (I use a 2 oz. bag of pecan chips but you can use more)

1/2 c. melted margarine (I used butter instead)

Preheat oven to 350

To go with the 1/2 cup of butter/margarine (for this I wouldn't melt it), I would blend in 1 cup of rice flour or whatever flour mix you like, a cup of sugar (white or light brown), and a teaspoon of cinnamon if you want extra flavor--or skip it if you don't. Chop the nuts, add those and spoon evenly over the top.

I make this exactly as the recipe states using the Betty Crocker Gluten Free yellow cake mix. Works perfect! :)

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
