Gluten Timing And Process? How Long?

Okay, so I had been at work all day, literally, and didn't have time to stop and eat. We had a banquet to set up for and then work at it. They ordered pizza for all the workers and the banquet had a meal catered in. Like i said, didn't have time to eat and I was starting to get the shakes really bad. So, I ate some of the pizza. I know, major mistake. I've been gluten free for about a year and a half, besides accidental intake. sadly enough it wasn't just one or two pieces. It was closer to about 10 or 12 small domino's square pieces. I am Dairy free also along with Celiac. My question is, how long will it take to start its Process of making me sick and how long will it take to get out of my system. Usually it takes a week to get out of my system from a small amount. I ate it on Friday night and now I'm just waiting for it to take effect. My Arthritis is starting to kick in so I know it will start in the next day or so. Also, whenever I was tested, my number, which I don't know how its tested, but it was 33. so the doctor said I officially have Celiac and i already had enough of my body suffering. I also have trouble getting to sleep and once I am, I don't want to even wake up. I just wanna sleep. All the Time. Any suggestions on all these questions would be greatly appreciated.

Oh, gosh. I always keep an emergency snack in my desk for that kind of situation. I hope you don't get too sick.

For me, gluten hits 4-6 hours after and keeps going for a few days but everyone is different. I haven't eaten that much in years though. Pepto Bismol really helps my stomach.

As far as the sleeping, have you had your thyroid checked recently?

So, It finally hit today. It has been Horrible and all the celiac disease symptoms are finally taking its course. Yesterday, I had the achy feelings and my arthritis started to settle in. Today, Felt so Exhausted and barely able to stay awake. I finally ate dinner and as soon as we got home, my stomach blew up like a balloon and the rest of the nasty stuff hit. I hate that I did this and now I hope that it will pass before the weekend. We have a huge play at our Church and I'm one of the main leading parts. If it doesn't start to get out quickly then I'll have to cut back on foods to make sure I'm not having to use the bathroom the entire time. I really hate this disease!!! Celiac and No Dairy. I mean Really!?! I knew better than to do this to my body. And sadly enough, the smallest amount always gets me sick and I went Over Board like an idiot.

I never thought of having my thyroids checked. What symptoms do they give? And could this be related to the sleep stuff? I have had Mono at some point in my life. Not sure when cause the doctor never did testing until I went to a new doctor. He's actually the one who told me that I had it at one point cause it showed up in my blood test one time. Could this come back?

Oh, and do you know if the blood test that tested me that was a 33 is bad? I'm not sure what this number means?

Matt, I am new to all this, but I've had tests run at two different labs, and the values were different. One was <10 = negative; the other was <20 = negative. There may be other tests out there, too. A value of 33 would have been high on either of these, though. Sorry you feel sick.

I'm sorry to hear you're sick, and that it's at a bad time. I find Immodium really helpful to keep from needing to run for the bathroom. It makes me a little drowsy so you might try a little earlier in the week to see how you react to it. Pepto Bismol helps me too, especially with nausea.

I appreciate that. I'll try either one at this point. I have to say that I really hate that there is no cure. And on top of that, all the food for Gluten, Dairy free people is Expensive. My wife and I spend probably around 800 dollars a month for groceries, and about 600 is just my food. I'm not sure why, but even when I'm eating gluten and dairy free, I'm still always hungry. Feel like I'm starving, but my weight usually stays the same. The test the doctor did, it had to be above 15 to be considered for Celiac to be positive. And mine was double. I'll try to find out what test he ran to see if any of it sounds familiar to anyone. Thank You for your help.

Well I gotta say, Welcome First of all. I know that the test the doctor did had to be above 15, and mine was double, 33, I'm not sure what test he did but I'll try to find out and maybe someone will know what it means. I'm sorry to hear that your having issues and that your test have been negative. I do hope they find something. My doctor wouldn't do the test from the skin tissue because he said I had already had enough stress on my body and mind. And the fact that the number was so high, it made a positive test. That was even being Gluten free for a year. Have you had your doctor wanting that test? Are you having celiac disease symptoms?

The severity of villous damage is very poorly correlated to the numbers on the bloodwork. It just means your antibodies are making it out of your gut to the bloodstream.

The only way I know of to spend $600 a month on food is if you're eating far too much processed food. Rice, potatoes, beans, fruit, vegetables, and a little meat, fish, and eggs should not cost that much. Potatoes are cheap and you can get a huge bag of rice for $20. I buy completely "normal" groceries, with the exception that there is never bread in my cart. Every once in a while I buy a loaf of Udi's or a bag of gluten-free pasta.

There are traces of gluten in processed food and we have no idea how that stuff affects the long-term health of celiacs. Remember that because of the way grains are harvested, stored, and processed in the US, much of the "gluten-free" food has small traces of gluten. It's generally below 20 ppm because of the proposed congressional regulations, and better companies keep it below 10 ppm, but it is still cross-contaminated. To my way of thinking, food that is naturally totally gluten-free like a potato or greens is a much better and safer celiac diet.

You may still feel hungry all the time if you haven't been gluten-free very long and your body is trying to repair itself. Newly diagnosed celiacs often need more calories. It can also be a sign of some remaining malabsorption. Some people want more food if they're not getting the nourishment they need from what they eat. Either way, it should improve with time.

We buy a lot of eggs, Chicken, Turkey Meat, Canned goods, Shrimp, and I think the most expensive stuff is all the "Gluten Free" foods from our Local HyVee. We try to buy different stuff because I got burnt out on cans of Tuna everyday for lunch and sometimes dinner. It gets old eating the same thing all the time. We don't buy processed food because of all the additives they put in. You never know what is actually in it. And that is not cool that the Gluten free foods still could have traces of Gluten in them. Now we'll have to really watch what were buying. How on earth can they do that to us? Say it's Gluten Free when it's not actually Gluten Free. That's just wrong. It gives false hope to being somewhat normal and eating normal foods. Sorry, not mad at you, just at the fact they can call it Gluten free when it's not really gluten free. Maybe I need to see a nutritionist to get a better meal plan? We have such a crazy schedule and it's hard to plan all our meals. I know that's a big problem. Most of the time I eat 3 eggs in the morning, a chicken breast for lunch, and dinner is usually chicken again or Gluten free pasta with tomato sauce and turkey meat. We have been finding more stuff at Wal-Mart and or bill last month was about half what we normally spend. Which was awesome. We literally cut or grocery bill in half. Sorry I keep going on. I really do appreciate all your help. Thank You so much. Oh, about how many calories do most of us need?

      In this case the beer is excellent, but for those who are super sensitive it is likely better to go the full gluten-free beer route. Lakefront Brewery (another sponsor!) has good gluten-free beer made without any gluten ingredients.

      Welcome to the forum, @catsrlife! Celiac disease can be diagnosed without committing to a full-blown "gluten challenge" if you get a skin biopsy done during an active outbreak of dermatitis herpetiformis, assuming that is what is causing the rash. There is no other known cause for dermatitis herpetiformis so it is definitive for celiac disease. You would need to find a dermatologist who is familiar with doing the biopsy correctly, however. The samples need to be taken next to the pustules, not on them . . . a mistake many dermatologists make when biopsying for dermatitis herpetiformis.

      You state in an earlier post that you don't have celiac disease. Here in this post you state you will "be doing another test". What will this test be looking for? What kind of celiac disease testing have you had done? If you have used a Entero Labs it sounds like you have had stool testing done for celiac disease which is not widely accepted as a valid celiac disease diagnostic testing method. Have you had blood antibody testing for celiac disease done and do you realize that for antibody testing to be valid you must have been eating generous amounts of gluten for a period of weeks/months?

      No, I've not been diagnosed as celiac.  Despite Entero Labs being relocated to Switzerland/Greece, I'll be doing another test. After eating wheat products in Greece for 4 weeks, there wasn't any reaction.  However, avoiding it here in the states.   Thanks everyone for your responses.
