Dairy Free "cheese"?

Hi -

Can anyone recommend a good dairy free/gluten-free "cheese"? Is there anything out there that even comes close in texture, melting, flavor, etc. to regular? My son is OK with soy but we are trying to cut back on dairy as much as possible.

A brand called Daiya makes a quite good dairy free shredded "cheese." It comes in mozzarella and cheddar flavors. It's a bit expensive, and can be difficult to find in a store, although there are places online where you can order it. This has been the best option I have found.

I got into making nut cheese to use instead of cream cheese or ricotta. Pretty simple too, 2 cups of mac nuts or or nuts in a food processor with water almost to the top -- I think add spices like garlic powder or fresh herbs or like yesterday a bunch of pepper for a spicy cheese spread. After 5 or so minutes it comes out just like cream cheese. I usually put it in cheese cloth with a weight on top and leave it out overnight to drain off the whey. Totally amazing results. It does not melt like regular cheese but in things like lasagna its really great.

      Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
