Does anyone know why the baking times for things made with gluten-free flours are less than what the recipes say. On average, when I "convert" a recipe by substituting Bob's Red Mill gluten-free All-Purpose Flour for regular floor, I have to watch carefully and usually reduce the time by 10 minutes. My oven is spot on, so I'm sure it's not an oven issue. I don't mind being more careful and checking to see if things are done more often.......just curious if anyone else has found this to be true. Thanks. (Got brownies cooling as I type this.) :)

I use the time stated in a recipe when I convert it. I don't usually have any problems.

I find it works best to set my oven 25

There is a warning on the dark-coloured nonstick pans that you need to reduce baking time or temperature.

A lot of gluten free flour substitutes such as seed or nut meals need to cook at either a lower temperature or they will burn if you go the full recommended time.

This is common with a lot of the loaf breads. Have to do them slower, with maybe the oven turned down to 25

Yes, I've found baking times vary. A lot of factors can cause problems in baking, things like altitude, weather, humidity, the type of baking pan you use ---glass or metal. The best thing I found is to experiment. My next best trick is I always insert a toothpick to test for doneness. If it comes out with batter, I keep cooking a few minutes more until the inserted toothpick comes out clean.

      @cristiana Hi, thank you so much, I will look into those books for sure! And get bloodwork at my next appointment. I have never been told I have TMJ, but I have seen information on it and the nerve issue while googling this devil plague in my mouth. Thank you so much for the advice!

      Peanut Butter cookies - on the crisp side.   approx 20 smallish cookies  1 C  plus 2 tblsp rounded. 'natural' peanut butter ( the kind you have to stir to blend the PB & oils)....  I know, it's a pain!! 1/2 c granulated sugar ....plus 2 tblsp dark brown sugar 1/4 c olive oil... plus 1 tblsp 1 large egg .....and 1 tsp vanilla 2 tsp cinnamon - optional but is yummy with the PB mix the above.  In another bowl mix the following dry ingredients: 1 cup brown rice flour  ( I use this  flour as it leaves no yucky after taste in my cookies & lb cakes..... and coffee cake, I buy it at the "Bulk Barn" here in Canada....... states side try health food stores??? I'm not sure where you can buy bulk food that also carries gluten free flours. 1/2 tsp baking soda.....1/4 tsp salt   (I use the pink sea salt) Mix well or sift, then mix with wet ingredients. heat oven to 350f, line baking sheet with parchment paper. Roll about 2 tblsp dough between your hands, place on cookie sheet and press down  with a fork.   The flatter the cookie the crispier it is.     Bake 13-14 min  When done leave on baking sheet till cool.       I did talk to the nurse and she asked who told me no red meat.  I explained the person who called with the results of my blood work.  That was last week.  She told me the doctor was on vacation and would be back this week and she would talk to him and have someone call me this week.  I have not received a call yet.  I will call them back Monday as a reminder.
