Hi -

Anyone have a favorite corn cake recipe? I picked up some local corn on sale at the farmer's market and I'm trying to find some creative ways to introduce veggies to my veggie-hating preschooler.

My mom used to put cooked corn in our pancakes. :(

My boys liked corn with butter or olive oil and salt. Salt being the way to make them like it. now I don't salt it & sometimes they forget to put the salt on it.

Sometimes I put it in chili, & they really like that.

There are recipes on the internet for Arepas. These are a grilled corn cake. Maybe you could add sugar to make them a bit sweet if you think that would help. Then bake off the sugar over time.

My youngest (15) to this day loves "cold corn". Frozen corn - still frozen. :blink:

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
