Who Is Gluten-free Casein-free?

I just went CF a few days ago and was fine until today. I chose to go CF (despite past elim diets that never showed me a problem) b/c I read that there's a significant correlation between folks with celiac and type 1 and producing antibodies to casein. So, since I'm pre-d I thought I'd skip the whole "moving to full blown diabetes" thing ;-) Or at least try my best!

I was doing fine completely Gluten-free Casein-free until tonight. I wanted some dairy so bad that I could've hurt someone to get a glass of milk. I wanted buttery bread, tacos for the cheese and sour cream and soup for the customary glass o milk that I drink with it.

Anyone else have a similar casein-withdrawal experience? BTW, I think I must have a sensitivity since a) I'm having such a hard time now being cf and B) I've lost a few lbs in a few days despite keeping my calories the same and only removing dairy.

I went gluten/casein free after I received my Enterolab results 7+ years ago. Gluten abstinence was MUCH easier than casein abstinence, because I didn't initially have dairy substitutes which were also free of my other allergens (soy, egg, cane sugar, vanilla and nutmeg). However, over the years I've found satisfying cheese (Daiya), milks (almond or hazelnut), yogurt (from almond milk), ice cream (Truly Decadent coconut milk base) and butter substitute (soyfree Earth Balance). Now that I have all those substitutes, I don't miss real dairy products at all ... unless I walk by a Baskin Robbins. SIGH I do miss those spontaneous BR runs. I remember precasein allergy Dx taking a long subway trip in the middle of a snowy winter in NYC to get some BR ice cream. Oh well, I feel soooo much better w/o those horrible gut cramps and sinus infections I get when I eat dairy.

Yes. It's really hard until you adapt your habits and taste buds away from dairy. But thy takes time. I've been dairy free (outside of one recent test), for about seven years, and it's still annoying.

      Wheat flour is fortified with vitamins in the U.S. as a part of USDA policy. Gluten free facsimile products are not fortified. There is no government mandate for such. When you remove wheat flour by going gluten free, you may be removing a significant source of vitamins.
