This weekend I was in the Bakersfield, California area visting my folks. We went to Bakersfield to a place called Lassen's. It is a family owned store similar to Whole Foods. They had a lot of great gluten-free products. The best thing about that visit was that one of the employees is a Celiac. We were able to talk a bit. After I left I realized that this was the first time that I was able to talk face to face with someone else who is dealing with celiac disease. It felt GREAT!!! :D I've asked this before...anyone reading this from Fresno, CA??? :unsure:

Hi Kathleen,

I recently moved to Fresno from San Jose (just a bit south/west of Clovis). I am classified as "gluten-intolerant" rather than celiac because I have not been diagnosed via the biopsy. Regardless of the label, however, I need to be gluten-free to stay healthy. I was diagnosed almost 2 years ago, so have some experience with the disease and the emotional impact it can have on your life. I don't know much about Fresno yet, but would be happy to talk to you any time. Feel free to email. - Alicia

Hi, I am pretty close to you, living in Bakersfield, going to Fresno often as my husband attends FSU. I love Lassen's as well. The owner there takes a real interest in Celiac's and Gluten intolerance as well as Wheat intol. Their Kinnikinik bread is THE BOMB.

      So just to be cautious, there is a big difference between cured, and responding to their medication. I assume you mean that your daughter responded well while taking KAN-101 during the trial, but the drug would not cure celiac disease, but may manage it while you are taking it. Let me know if I got this right.

      Is Caputo gluten free flour really free of gluten?

      Welcome to the forum, @Godfather! "Gluten-free" is not the same as zero gluten. The FDA standard for allowing the food industry to us the gluten-free label on a product is that it cannot exceed 20 ppm of gluten. That is safe for most celiacs but not for the subset of celiacs/gltuen sensitive people who are super sensitive. "Gluten-free" wheat starch products...

      Welcome to the forum, @Dana0207! Another diagnostic approach would be to get biopsied for dermatitis herpetiformis which would not require an extensive exposure to gluten. But it would need to be done during an active outbreak of the rash. Celiac disease is the only known cause for dermatitis herpetiformis so it would be a definitive diagnosis. It might be...

"Gluten-free" wheat starch products have been processed in such a way to remove enough of the protein gluten to comply with the FDA regulation but usually do retain some gluten and we usually get reports from some people on this forum who fall in the more sensitive range that such products cause them to react. Hope this helps. So, you may just have to experiment for yourself.

      Is “Caputo Fioreglut Gluten Free Flour” truly gluten free?  The main ingredient is supposed to be gluten free wheat starch along with other ingredients.  However, the resulting homemade bread made with this flour so resembles homemade gluten bread that it seems Caputo must have some gluten?
