A Few Questions

I just went gluten free 3 weeks ago. Still not feeling very well but I know it may take a long time. I have a few questions, please.

I am way underweight due to the last 7 months of horrible symptoms. I'm trying to eat what I can, but I've learned you can't gain much weight no matter how many fruits and vegetables you eat. I'm also eating meats and I've made a few gluten free pasta dinners. I've got to feed the family too.

I'm trying to drink Ensure Plus because it has 350 calories and lots of vitamins and minerals. It doesn't go down well or sit well with me though. Is Boost better?

Also, I got rid of all my scratched teflon pans and all my tupperware and replaced with new. Toaster too. However, I have these wonderful cookie sheets given to me by a family member that worked in a school cafeteria. They're thick and everything bakes so nicely on them. I haven't been able to part with them yet. However, they are scratched and everything I baked on them in the past likely had gluten. Must I get rid of scratched metal cookware like a cookie sheet? I understand the teflon, the plastic, and most especially scratched wooden cutting boards, but what about my nice cookie sheets and my club aluminum ware that my mother purchased for me many years ago but is still in good shape?

Your input is much appreciated!

Debbie

You can scour aluminum pretty well with barkeeper's friend. I kept my stainless pots and cleaned them with it and all is fine. If there are deep impressions you may just have to switch them out.

I kept my aluminum cookie sheets (after scouring with bkf). An alternative is to line them with parchment paper when using. So far so good but I will eventually replace them with new. I don't allow gluten on my new aluminum holey pizza pan, too difficult to clean!

Oh, I'm so pleased to hear I can keep my nice cookie sheets and my club aluminum ware. Thanks so much for the reply!

Just beware - if you feel like you get glutened after using them (or feel like you can't shake the gluten and can't pinpoint it) you may need to revisit those cookie sheets and pots.

I second parchment paper or maybe even a silicone baking mat.

Being underweight is not a situation I've ever had to deal with, but can you tolerate dairy? Maybe add some cheeses, cream soups, sour cream, that sort of thing to meals.

Sometimes it takes a while to heal. Although Boost is okay, I would keep your consumption of dairy to a minimum for the time being.

So the tTG-IGA at 28 is positive for celiac disease. There are some other medical conditions that can cause elevated tTG-IGA but this is unlikely. There are some people for whom the dairy protein casein can cause this but by far the most likely cause is celiac disease. Especially when your small bowel lining is "scalloped". Your Serum IGA 01 (aka, "total IGA") at 245 mg/dl is within normal range, indicating you are not IGA deficient. But I also think it would be wise to take your doctor's advice about the sucraid diet and avoiding dairy . . . at least until you experience healing and your gut has had a chance to heal, which can take around two years. After that, you can experiment with adding dairy back in and monitor symptoms. By the way, if you want the protein afforded by dairy but need to avoid casein, you can do so with whey protein powder. Whey is the other major protein in dairy.

hi, i want to say thank you to you and @trents   . after 2 phone calls to my GI, her office called me back to tell me that a blood test was “unnecessary” and that we should “follow the gold standard” and since my biopsy did not indicate celiac, to follow the no dairy and sucraid diet. i luckily have expendable income and made an appt for the labcorp blood test that day. i just got my results back and it indicates celiac disease i think 😭   im honestly happy bc now i KNOW and i can go gluten free. and i am SO MAD at this doctor for dismissing me for a simple blood test that wouldn’t have cost her anything !!!!!!!!!!! im sorry, im so emotional right now, i have been sick my whole life and never knew why, i feel so much better already   my results from labcorp:   Celiac Ab tTG TIgA w/Rflx Test Current Result and Flag Previous Result and Date Units Reference Interval t-Transglutaminase (tTG) IgA 01 28 High U/mL 0-3 Negative 0 - 3 Weak Positive 4 - 10 Positive >10 Tissue Transglutaminase (tTG) has been identified as the endomysial antigen. Studies have demonstrated that endomysial IgA antibodies have over 99% specificity for gluten sensitive enteropathy. Immunoglobulin A, Qn, Serum 01 245 mg/dL 87-352

      Thank you this really helped.

Okay that is really good to know. So with that being positive and the other being high it makes sense she diagnosed her even without the endoscopy. So glad we caught it early. She had so many symptoms though that to me it was clear something was wrong.   yeah I think we had better test us and the other kids as well.

One doctor suggested it, but then seemed irritated when I asked follow-up questions. Oh well—
