Chebe-plain Mix

Because of those who say Chebe is great I want to experiment with this mix. I want to make Foccacia Rosemary bread with it.

Has anyone done this already and may have receipe or suggestions of what to do or NOT to do?

My one concern about Chebe is that it has no fiber in it. Other than flax, would rice bran be an OK ingredient to add to my Foccacia bread? My husband can't tolerate flax in his diet.

You could make a separate part of the meal contain fiber rather than trying to add it to the bread. Jenvan says she chebe sticks with lentils for dinner and that's good fiber.

Thanks for response....under normal circumstances I could make separate, but hubby can't have vegetables like a normal celiac. he just started eating canned vegetables and can't over do them. Before celiac, he ate a lot of shredded wheat and wheat bran as his source of fiber, now that he's gluten-free, lack of fiber is a problem.

I would think you could probably add some rice bran to it. Rice bran is a good source of fiber.

Have you thought of using Psyllium Husks I add it to my bread or muffins to increase the fibre in my cooking. Lola Workman one of the Australian celiac authors recommends it in her book Wheat-Free World. She uses in her bread, pasta, pastry, scones, muffins, crumpets and Focaccia bread recipes etc She has some great recipes in her cookbook Wheat –Free World. I find them really easy to follow and they in general really healthy.

I get a lot of fiber thru Citracel. I tried Metamucil but it causes tons of gas, the Citracil product says right on it that it does not ferment in your belly and thats been my experience. I tolerate it very well.

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.
