ARCHIVED Portable Foods For School
bbuster replied to sweetlovelyjen's topic in Gluten-Free Foods, Products, Shopping & Medications
Between school lunches and baseball double-headers, my son eats a lot of ZonePerfect bars. They have a lot of protein, so they are filling. Sometimes I eat them for a "lunch" when that's all I have time for. -

ARCHIVED Need Ready To Eat Meals For Son
bbuster replied to Brillious's topic in Gluten-Free Foods, Products, Shopping & Medications
One of our staples is Taquitos. Be sure to get the ones made with corn tortillas, as some are made with (wheat) flour tortillas. There are also several varieties of ZonePerfect bars which are gluten-free. My son packs these for lunch most days. -
ARCHIVED Size Difference In Siblings
bbuster replied to sugarsue's topic in Parents, Friends and Loved Ones of Celiacs
In our case, it took about 6 months gluten-free to get the bloodwork negative. After my son's bloodwork had been negative for a year (so 18 months gluten-free), his growth rate had only improved from about 1 inch per year to 2 inches per year. But he was already so far behind, he would be lucky to reach 5' at that rate. I'm 5'7 and his dad is 5'10, by... -
ARCHIVED Size Difference In Siblings
bbuster replied to sugarsue's topic in Parents, Friends and Loved Ones of Celiacs
We found a great endocrinologist. She did a battery of tests to make sure he was a good candidate. He also tested negative for growth hormone deficiency. Basically he was a candidate because he was so small. The endo helped a ton with the insurance. (This stuff is ungodly expensive). But after a year, our insurance stopped covering it. (I think it... -
ARCHIVED Size Difference In Siblings

My son was diagnosed with Celiac at age 10 and was always the smallest in his class by far (below 1% on the charts). After going gluten-free and getting his bloodwork negative, he started growing more, but no huge spurt and nowhere near catching up to his peers. At that point we investigated growth hormones, and he was a good candidate. He has been... -
ARCHIVED Logan's Roadhouse gluten-free Menu
bbuster replied to jcford33's topic in Gluten-Free Restaurants
We have one in our town, and the reply above is the same one I got, twice (tried a second time after over a year) so I put them on my personal "don't bother" list. If this is changing, it would be great! -
ARCHIVED Multi-purpose Flour?
bbuster replied to katdw's topic in Gluten-Free Recipes & Cooking Tips
I use Bette Hagman's Featherlight flour for most things - cookies, cakes, bread, brownies 1 cup white rice flour 1 cup tapioca flour 1 cup corn starch 1 tbsp potato flour (not potato starch) I sometimes leave out the potato flour if I don't have it on hand. You need to add Xanthan gum to this, but depends on what you are making - about 1/2 tsp per... -
ARCHIVED Need Some Help And Advice For Child With Celiac
bbuster replied to katdw's topic in Parents, Friends and Loved Ones of Celiacs
A staple at our house is Taquitos. I just buy a big bag of them (frozen) and just heat up and serve with salsa and cheese. Just make sure you buy the ones made with corn tortillas and not flour tortillas. We also do quesadillas (corn tortillas), with or without a little diced meat added to the cheese. -

ARCHIVED Catholics: Avoiding Cc For Communion
bbuster replied to NicoleAJ's topic in Coping with Celiac Disease
The .01% is a maximum potential gluten content. It is likely well below that. Also, they recently made them a little smaller than before. It's smaller in diameter than a normal host, and seems to be quite a bit lighter in weight. My son has received these as much as 3 times per week and continues to have negative bloodwork and no signs of reaction... -
ARCHIVED Shaped Pan Molds For Buns And Doughnuts...
bbuster replied to Esther Sparhawk's topic in Gluten-Free Foods, Products, Shopping & Medications
I have several Corning and also Pyrex small dishes that I use for buns. I'm sure I got them at Wal-Mart. Whenever I make a loaf of bread, I shape one or two buns and freeze the uncooked dough in my bowls. Then I can bake an individual bun in the toaster oven when I need just one - that way it is fresh. -

Yes, two brands that I know are gluten free are El Monterey and Delimex. Just check closely, as they can be made with (wheat) flour tortillas or corn tortillas.

One staple at our house is frozen Taquitos - several kinds are gluten free. All you have to do is heat them. Tacos are easy too - you can make up extra taco meat and freeze it. Just read the label carefully for the taco seasoning - some have gluten. We use McCormicks.

ARCHIVED What's A Good Gluten Free Cookbook?
bbuster replied to jjc's topic in Gluten-Free Recipes & Cooking Tips
I mostly use The Gluten-Free Gourmet Bakes Bread by Bette Hagman. I second the suggestion about checking out library books to see what you like. After several rounds, I bought this one, and use it routinely. Has a lot of good background info at the beginning besides just the recipes. -
ARCHIVED Short Stature...
bbuster replied to driedupfish's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Short stature is what prompted me to get my son tested for Celiac (after many other investigations proved negative). He had no GI symptoms or outward reactions to gluten. He did have a distended belly. He was indeed confirmed to have Celiac (blood test followed by endoscopy). Good luck to you. -

My son is the only Celiac in the family. We go to Waldo's every time we are in the KC area, usually every 2-3 months. The pizza is really good. Last time we were there, my son also got a gluten-free brownie. After eating something like 3/4 of a 12 inch pizza by himself , we got the brownie to go. It was pretty small and probably equivalent to what...

ARCHIVED Gluten Free Dairy Free Waffle Cones

It does some, I just concentrate the batter in the middle (don't fill all the way to the edges) to compensate. It takes a little playing around to get it the right thickness. -
