  1. Between school lunches and baseball double-headers, my son eats a lot of ZonePerfect bars. They have a lot of protein, so they are filling. Sometimes I eat them for a "lunch" when that's all I have time for.
  2. One of our staples is Taquitos. Be sure to get the ones made with corn tortillas, as some are made with (wheat) flour tortillas. There are also several varieties of ZonePerfect bars which are gluten-free. My son packs these for lunch most days.

  8. A staple at our house is Taquitos. I just buy a big bag of them (frozen) and just heat up and serve with salsa and cheese. Just make sure you buy the ones made with corn tortillas and not flour tortillas. We also do quesadillas (corn tortillas), with or without a little diced meat added to the cheese.

  10. The .01% is a maximum potential gluten content. It is likely well below that. Also, they recently made them a little smaller than before. It's smaller in diameter than a normal host, and seems to be quite a bit lighter in weight. My son has received these as much as 3 times per week and continues to have negative bloodwork and no signs of reaction...
  11. I have several Corning and also Pyrex small dishes that I use for buns. I'm sure I got them at Wal-Mart. Whenever I make a loaf of bread, I shape one or two buns and freeze the uncooked dough in my bowls. Then I can bake an individual bun in the toaster oven when I need just one - that way it is fresh.

  13. Yes, two brands that I know are gluten free are El Monterey and Delimex. Just check closely, as they can be made with (wheat) flour tortillas or corn tortillas.
  14. One staple at our house is frozen Taquitos - several kinds are gluten free. All you have to do is heat them. Tacos are easy too - you can make up extra taco meat and freeze it. Just read the label carefully for the taco seasoning - some have gluten. We use McCormicks.
  15. I mostly use The Gluten-Free Gourmet Bakes Bread by Bette Hagman. I second the suggestion about checking out library books to see what you like. After several rounds, I bought this one, and use it routinely. Has a lot of good background info at the beginning besides just the recipes.
  16. Short stature is what prompted me to get my son tested for Celiac (after many other investigations proved negative). He had no GI symptoms or outward reactions to gluten. He did have a distended belly. He was indeed confirmed to have Celiac (blood test followed by endoscopy). Good luck to you.

I have not personally tried this but it sounds good and is on my list of things to try: Substitute for a graham cracker crust: 2 1/2 c. of Rice Chex crumbs 1 Tbs. of honey 1 stick of melted butter grind Chex in blender or food processer add honey and butter mix together; pat into pie plate; bake on 350 for 15 min
