  1. The Wal-Mart on East Kearney (just east of Glenstone) has a gluten-free section in one of the aisles. It's not marked as such, but it is maybe 25% of a grocery aisle. They have breads, pasta, pretzels, cereals, several types of flour and mixes. I would go there first. There is an Asian Market on West Sunshine (a little east of Kansas) and also one on...
  2. I tried the locator (I'm in Springfield, MO) and got the same result - no stores within 100 miles have gluten-free pizza. So I used the website "contact us" to ask if any would be coming, and got the following reply. The Nixa store is no more than 5 miles from my house! From: Victoria Orman <VOrman@godfathers.com> Date: 02/04/2010 03:10 PM...
  3. My son takes his lunch to school every day. Many days he packs a ZonePerfect bar and supplements with 2 or more of the following: fruit, chips, gluten-free cookie, pudding, veggies. You can get a 5-pack of Zone Bars for about $5, and each has 15 grams of protein, so they are good for an occasional meal or snack. I eat them too, although I am not gluten...
  4. We also buy Isabella's Best Gluten-Free Pizza (frozen) at Sam's Club. This is a really good thin-crust pizza, but does not have a lot of toppings so we always pile on more. I think it's around $13 for a box containing 2 pizzas. Not sure how many stores carry this.
  5. I have tried many recipes. My son's favorite, hands down, is Bette Hagman's recipe from The Gluten-Free Gourmet Bakes Bread. I make this at least once a week, and always make an extra crust or two (personal size) and freeze after the first bake (no toppings). This makes a New York style crust. I have also had success using whole eggs instead of just...
  6. I don't think they care at all what food you bring, just no alcohol. I think they asked about fresh fruits and vegetables after the cruise (going through customs). They would not let you take any of their food off the ship (like an apple for the the ride home).
  7. Some flavors of ZonePerfect bars are gluten-free. The ones I have right now say 15 grams of protein.
  8. Carrot cake is pretty easy: Carrot cake recipe #2 cream together 4 eggs 2 cups sugar 1 1/2 cup vegetable oil blend dry ingredients 2 1/4 cups gluten-free flour 2 1/2 tsp baking soda 1 tsp salt 1 tbsp cinnamon 3 cups shredded carrots Blend dry ingredients with the rest Stir in 3 cups shredded carrots Bake in 9 X 13 pan for about ...
  9. I would make the dough without heating the milk, then shape it in the pan - use oil cooking spray or parchment paper on the bottom/sides and cover the top with plastic wrap (spray the plastic wrap with cooking spray where it will touch the bread. Then freeze. Then I would suggest moving it from the freezer to the refrigerator the night before, and then...
  10. I make pizza at home about once a week (use Bette Hagman's recipe). Every time I make pizza crust, I make extra individual size crusts, go through the first cook cycle, then freeze these crusts. I bought some of the small (6 inch, I think) pizza tins, but now that my son is 15 they are too small, so I use layer cake rounds. Whenever there is a pizza...
  11. If you make the crust layer with Pamela's Baking Mix (which I plan to try) don't bake for 20 minutes - more like 10.
  12. He had slightly positive bloodwork and a positive biopsy. He had no active GI symptoms, but was very small for his age - at 10.5 years, he weighed about 60 lbs and was only 50.5 inches tall. He was not "skinny" but was about average, except he had a distended belly.
  13. I'm trying to remember - my son had an endoscopy at age 10 also, but that was 5 years ago. As best I remember, the endo said that eating the equivalent of one piece of bread a day was enough.
  14. We have been in this position, and ZonePerfect bars were the answer for us. They have several flavors which are gluten-free (I have a recent post on this). They are high in protein, so they are good for you and fill you up a lot better than chips or something like that. You can get them at Wal-Mart, Sam's Club, grocery stores, etc.
  15. For Thanksgiving, I made this dessert and added broken pieces of a Heath Bar on top, also a gluten-free pumpkin pie using Pamela's for the crust, and both were big hits with everyone.
  16. I got this recipe from this website - sorry I don't remember who posted it first. This recipe looks kind of weird, but it was all stuff I keep on hand, so I tried it. I thought it was surprisingly good. And it is great to be able to make a single, fresh bun. You can make this recipe in about 5 minutes total. I use a 5-inch round Corelle dish. When...
  17. This info is from about a year ago when I called the company: The customer service rep told me that the bars are made on shared equipment and some bars have gluten ingredients. When I asked further if she had information on how they change from one product to another, she found information stating that all the equipment is thoroughly cleaned and sanitized...
  18. My son was way short - that's how we first diagnosed the Celiac. After going gluten-free he started growing faster, but not enough to catch up. He is currently on growth hormones, with great results. Had he not, I think he would have ended up around 5 ft or maybe just barely over. The first 2 years of GH he grew 7.5 inches. Now at age 15.5, he is 5'...
  19. I live in Springfield, so we have some good resources, but am originally from a very small town in Southeast Missouri. I am finding that things are slowly getting better over time. What town are you from?
  20. Please don't feel that I am preaching to you. This is a very personal decision, and I believe that God knows what is in your heart. I just wanted to share what we do. We are also Catholic and go to a large (for the area) Church. When we found that my son had Celiac we talked to the priest. We did not know, but there were already two parishioners who...
  21. I have been doing gluten-free baking for about 4 years now. I have tried several bread mixes and have good luck with all. But they are expensive, so I prefer to work from scratch when possible. I have tried lots of recipes for bread and other items. My son's favorite bread is Bette Hagman's featherlight recipe. It is also the basis of my best (so...
  22. Just wanted to add my 2 cents... You already have some good responses. The fast bread/bun recipe already listed is surprisingly good, and you can do it in about 5 minutes in the microwave. I would suggest you buy several bun-sized Corelle or Pyrex baking dishes with lids. I have some white Corelle rounds that are maybe 5 or 6 inches diameter, and...
  23. I don't think so, but I would be interested to see if anyone else responds. I am originally from SEMO and get back to visit relatives, usually 2-3 times per year. There is a support group in Springfield, MO (where I live now) and also Branson, and the two collaborate frequently. I know there is a group in St. Louis area, but I don't know any specifics...
  24. "My son's GI said that you can roughly estimate adult height by averaging the parents' height and adding 2" for a boy and subtracting 2" for a girl" First my disclaimer, I have no medical background, but I was trying to answer the same question for an appeal to get our insurance to cover growth hormones for my Celiac child. Sorry I can't quote my source...
