That's interesting, now that I remember, the first time I got the rash it was a spot [about the size of a penny] on my left cheeck after throwing up and what i had ate was gluten free instant mash potatoes [made with regular milk] and an egg. I would also recommend adding veggies and fruits to your diet, berries [blueberries, strawberries] are high in fiber, so are apples, I know this will sound crazy but if you shred your apple and add sugar they are tasty, another way to make them good is chop the apples in chunks, sprinkle as much sugar/or splenda for less sugary, and pop it in the microwave...

  8. I am not sure how but I do agree that anxiety/depression IS linked to Celiac. After going gluten free my anxiety improved a little, though I've had it for too long as for it to completely go away, I have noticed that when I get glutened [which happened quite a few times at the beginning of the diet] I would have panic attacks much more often.

I don't often bake bread, though I do it a few times a month, but for "sandwiches" when I don't have bread or don't feel like baking it I usually wrap ham/lunchmeat in two corn tortillas or wrap my hotdogs [gluten free] in corn tortillas too, I eat more lentils/beans in all kinds of ways, cold bean salads, boiled beans and overall weird combinations...

  14. I don't know if this is what you are looking for, though they don't talk about Bipolar in this article, they talk of a way to reverse psychiatric disorders caused by Celiac or other diseases. I would think that if schizophrenia can be reversed this way, then bipolar could too. There's even people who don't need a treatment other than a strict gluten free...

Nah I didn't mean that it only happens in Celiac, I meant that when leaky gut happens in Celiac it can cause other autoimmune diseases by that mechanism, not everyone with Celiac has a leaky gut, and not everyone with Celiac has other autoimmune diseases.
