That's interesting, now that I remember, the first time I got the rash it was a spot [about the size of a penny] on my left cheeck after throwing up and what i had ate was gluten free instant mash potatoes [made with regular milk] and an egg. Yesterday we decided to grill fajita meat outside and it was a great idea, instead of the usual rice to accompany the tacos I decided to cook some potatoes, so here's how to get them crunchy, browned and they don't stick to the pan. I would also recommend adding veggies and fruits to your diet, berries [blueberries, strawberries] are high in fiber, so are apples, I know this will sound crazy but if you shred your apple and add sugar they are tasty, another way to make them good is chop the apples in chunks, sprinkle as much sugar/or splenda for less sugary, and pop it in the microwave... -

I am not sure how but I do agree that anxiety/depression IS linked to Celiac. After going gluten free my anxiety improved a little, though I've had it for too long as for it to completely go away, I have noticed that when I get glutened [which happened quite a few times at the beginning of the diet] I would have panic attacks much more often.

I don't often bake bread, though I do it a few times a month, but for "sandwiches" when I don't have bread or don't feel like baking it I usually wrap ham/lunchmeat in two corn tortillas or wrap my hotdogs [gluten free] in corn tortillas too, I eat more lentils/beans in all kinds of ways, cold bean salads, boiled beans and overall weird combinations... -

I don't know if this is what you are looking for, though they don't talk about Bipolar in this article, they talk of a way to reverse psychiatric disorders caused by Celiac or other diseases. Nah I didn't mean that it only happens in Celiac, I meant that when leaky gut happens in Celiac it can cause other autoimmune diseases by that mechanism, not everyone with Celiac has a leaky gut, and not everyone with Celiac has other autoimmune diseases. So I understand what you are saying, I just expressed myself incorrectly.. Ugh I know what you mean...

Ha, I'm a weirdo, I was always avoiding vinegar [white one is the one we always have] because I thought it would worsen reflux! I had no idea it could help it I dont know where I got that idea hehe -
I can't find the article [because I lost all my bookmarks] where it explains exactly the way Celiac [true celiac with malabsorption] causes other autoimmune diseases, I believe it is a reaction to gluten which allows for development of little open spaces in the intestine which allow "bad" proteins to leak into the bloodstream, the body recognizes these proteins...

I'll definitely try the muffins, I'm sure they're much easier to cook than bread Which are the best flours to cook with? I've bought many different flours which I still have in my pantry, so far I"ve tried White Rice Flour, Brown Rice Flour, Potato Flour, Soy Flour, and White Lentils Flour [urid Flour].
