  3. Coconut Palm Sugar has the lowest GI of any sugar, however check for a Low GI agave syrup (honey can be lower than some agave's) You could try to get Sorbitol Syrup. Brown Rice Syrup. A suitable thickener would be unflavoured gelatin. Use a low GI sugar replacer, water and gelatin to thicken. Best Regards, David
