  1. Those sound good! I hope they have them in Canada! What do they use instead of wheat?
  2. I skip the gravy BUT I do have an awesome stuffing recipe! Stuffing (Serves 8–10) * 2 shallots, minced * 2 onions, diced * 2 celery ribs, diced * 2 carrots, diced * 6 TB salted butter (I use less) * 2 tsp dry sage * 2 tsp dry thyme * 2 tsp salt * 1 tsp pepper * 1/2 cup white wine * 6 cup toasted g...
  3. If you have the gene for celiac than it would be very possible to develop celiac disease in the future if you are only sensitive to it now. I also didn't think anyone in my family had celiac, but some family members got tested (because of me) and my grandmother ended up getting postive results. I guess she never got super sick with it like I did and thus...
  4. Thanks Lisa! I've never heard of those places. Do you know what provinces they are in? Also, there is a lady at the Farmers Market on PEI that sells dinners that can be gluten free, dairy free, vegan, ect. I've had the food quite a few times now and have never gotten sick. She usually has hot food (so you can eat it there) and cold food (so you can take...
  5. Really? Oh no! What is "Fit" I eat a lot of 100% frozen veggies mixes. Would these have those additives in them? Obviously any veggies could have traces of pesticides or preserving chemicals if they are not organic. And even orgain growers sometimes use pesticides, so I guess you can't get away from it. But, if we didn't have pesticides we would not have...
  6. The coffee pot may have been contaminated by crumbs from donuts, bagels, bread, ect, in the bakery. This could happen very easily, especially in a bakery.
  7. Being on the diet 2 weeks prior to testing may give you false negative celiac test results. If you physically can, I would stay off the diet until you have talked to your doctor(s). The small intestine is biopsied in order to determine if you have villi damage. This is almost always done by endoscopy (down the throat) since the upper part of the small...
  8. If you cannot have a biopsy, I would ask for the celiac blood test panel and a gene test, to see if you carry the celiac gene.
  9. Which tests did you have done for celiac? If all of your symptoms went away after going gluten free than I would guess that you are sensitive to gluten or wheat. You may find that you develop symtoms after being on gluten for awile. I would definatley discuss this with your doctor.
  10. I'm glad that you finally have an answer to all of your problems. I don't understand why some doctors are like that. It's annoying, you'd think that they would investigate ALL posibilities before they make decisions like that. That is so premature
  11. Welcome! I'm not a monitor but maybe the Pre Diagnosis section would be a good place to start since you haven't been diagnosed yet. Hope to hear from you again
  12. From these results I would guess that he may have celiac disease. I'm no expert but I think I have read somewhere that individuals without the celiac gene can still have celiac (someone correct me if this is wrong). However, I think this is rare and my source could be false. Villi damage would point to celiac disease but I am confused about the negative...
  13. I think Kaiti is right, more damage = longer healing times. I was 22 at diagnosis (now 24) and it took me about 1 year to get better, and I am still not 100% some days, very close though
  14. I am also almost 5'7 and I weigh 122 pounds and that is still in the normal range. I monitor my weight becasue I was underweight (112) last year around the time of my diagnosis. According to the body mass index, the normal range for people around our height is 117-156 pounds so I think you are still ok. But, since you are dropping weight so rapidly, you may...
  15. Maybe you could ask your doctor about testing for various food allergies and intolerances, then you wouldn't have to wait for the results of an elimination diet. Or if you want to do the elimination diet maybe try eliminating the main foods that cause problems first like dairy, corn, nuts, soy, eggs, and obviously gluten. Also, if the villi in your...
  16. I've worked in a fast food place and it is easy for people to be careless with the gloves (like forget to take them off for example). It is very busy sometimes and very easy to forget little details like gloves. If you want to make sure they use separate gloves, I would order inside and ask that they use separate gloves due to severe allergies/intolerances...
  17. If you really want to consume dairy products, I would try it every month and see what happens. Try foods with less lactose first like butter, cheddar cheese, then maybe yogurt, and milk (higher lactose). You may have an intolerance to the milk protein casein or a permanent intolerance to the lactose in milk. Most celiacs will tolerate lactose again after...
  18. hmmm, those are some pretty bold statements by coke! I would love to see those study results and how they were done. Sometimes companies want their food to be safe so bad that they will do anything. I know of a guy that got in a lot of trouble (I think he was banned from work and from speaking to anyone at his work for quite awhile) after he said that his...
  19. The first few weeks/months can be rough, but you will slowing start noticing improvements in your health. You also shouldn't get as sick so often once your body heals. Just be patient and try to get through this. I know what it is like and it can be discouraging, but things will be better before you know it. In the meanime, I would take celiachaps' advice...
  20. I've never been on one, but I am also interested. And I would love to hear from people that have been on the trips.
  21. I don't know a whole lot about this, but it is possible that he is sensitive or intolerant to gluten and maybe get celiac in the future if he has the gene. You can get a gene test done to see if he has the gene for celiac, then you would know for sure. If present, the celiac gene is usually triggered "on" after a stressful event.
  22. All 1st and 2nd degree relatives should be tested for celiac disease since it is genetic. Since your daughter is showing signs of celiac disease and is genetically susceptable, then she should definately be tested. Low weight and diarrhea are common in people with celiac disease; however, some people have hardley any symptoms at all and still have...
  23. I have a few more ideas: Cold gluten-free pizza (or heated up in a microwave if they have access to one) Boost nutritional shakes (all are gluten-free I believe except chocolate malt) Veggy salads with gluten-free Kraft dressings (Kraft will clearly put gluten on the ingredient list so you don't have to worry) Fruit Salad Which tests did...
  24. From your results, I would say that you have a gluten intolerance or maybe even celiac (Although it is hard to tell since you didn't have a celiac blood test or biopsy). Feeling better on the diet is also another postive result. The fact that you have osteoporosis may indicate malabsorption of Calcium and Vitamin D, If you have celiac this will get better...
  25. I believe that the skin prick tests only test for allergies and not intolerances, so they wouldn't pick up intolerances to other foods. I actually had them done myself before I was diagnosed to find out what was wrong with me. The test said I had problems with wheat and yeast but not barley and rye, but obviously I do since I am celiac! That's why I think...
