    Hey Jeff, My daughter's doctor said something similar to this. It was something to the effect of . . . Eat gluten free, don't cheat, watch out for cross-contamination but don't become obsessive as chronic stress is also unhealthy. Most Celiacs can handle a small amount of contamination (hence the proposed 20ppm proposed labeling for processed gluten...
