ARCHIVED Alternative For Mayonnaise?
Ginsou replied to Oria's topic in Gluten-Free Recipes & Cooking Tips
Here is another possible alternative.....this one posted by Suzin....perhaps on this website. 1/2 cup oil 1/2 cup water 1 Tablespoon apple cider vinegar 1 Tablespoon lemon juice 1/4 teaspoon dry mustard powder 1/2 teaspoon sugar 1/2 teaspoon salt 1 teaspoon sweet rice flour 1/2 teaspoon xanthan gum Put all ingredients in a blender jar and... -
ARCHIVED Alternative For Mayonnaise?
Ginsou replied to Oria's topic in Gluten-Free Recipes & Cooking Tips
Good suggestion. I have no idea where the recipe came from, but someone named Melissa Taylor suggested it. On ocassion I make my own mayo using eggs and and it is excellent. I have many food issues, including soy, and am so happy that I can purchase Best Foods Canola mayo at a reasonable price at Walmart. -
ARCHIVED Alternative For Mayonnaise?
Ginsou replied to Oria's topic in Gluten-Free Recipes & Cooking Tips
I am not allergic to eggs, so have not tried this eggless mock mayo recipe. 1/2 teaspoon salt 1/4 teaspoon dry mustard dash paprika dash cayenne 1 Tablespoon vinegar 1 cup canola oil 1 cup water 2 teaspoons arrowroot 1 teaspoon xanthan gum 1 Tablespoon lemon juice dash onion powder Blend together until mayonnaise consistency, store as you... -
ARCHIVED Where Do You Buy Superfine Brown Rice Flour?
Ginsou replied to artemis's topic in Gluten-Free Recipes & Cooking Tips
I purchase "regular" brown rice flour and give it a whirl in the blender, although I really don't know if that makes it a bit finer. I've used Authentic Foods superfine brown rice flour and can't tell the difference between that and regular brown rice flour. King Arthur also sells a "stabilized" brown rice flour that gets good reviews. On occasion I purchase... -
I'm also allergic to soy. I buy Costco's Kirkland brand and do not have a problem with it, and use Spectrum or Hellman's/Best canola mayo. On occasion I also make my own mayo. At one time I was able to use the Polar brand tuna, purchased at Smart and Final, but haven't been near any Smart and Final stores for almost a year. If a can of tuna says vegetable...

ARCHIVED High Altitude Gluten Free Baking
Ginsou replied to GFreeMO's topic in Gluten-Free Recipes & Cooking Tips
I have baked cupcakes and brownies that came out perfect at 4,000 feet in Arizona, and while summering in Monument, CO the mixes I used came out perfect. I have used Betty Crocker and King Arthur, and Namaste. I've had disasterous results with most other commercial mixes, especially 1-2-3- Gluten Free Brand. My gluten eating neighbors begged me for more... -
ARCHIVED What Is A Good Dairy Free Butter Substitute For Cooking And Toast?
Ginsou replied to mommyto2kids's topic in Gluten-Free Recipes & Cooking Tips
You don't have to give up cheese...Daiya makes an excellent product...in addition to several flavors of dairy-soy-gluten-lactose and casein free cheese, they have several flavors of wedge cheese.....cheddar is my favorite for grilled cheese sandwiches. It melts like real cheese and tastes like real cheese. There are other brands of cheese substitutes... -
ARCHIVED What Is A Good Dairy Free Butter Substitute For Cooking And Toast?
Ginsou replied to mommyto2kids's topic in Gluten-Free Recipes & Cooking Tips
I'll have to give Purity Farms ghee a try again.....I once tried it and it bothered me......perhaps it was something else that bothered me that day...I've recently added acid reflux and hiatal hernia to my list of health "issues". I also discovered the lactaze enzyme tablets that I took for 15 years contained soy and wheat, never realizing I had a soy and... -
ARCHIVED What Is A Good Dairy Free Butter Substitute For Cooking And Toast?
Ginsou replied to mommyto2kids's topic in Gluten-Free Recipes & Cooking Tips
I use Earth Balance buttery spread as a substitute. I'm lactose intolerant and also soy intolerant and use the Earth Balance in the Red container. Our local Walmart has recently started selling this product, and the cost is less than at the natural food store. -
ARCHIVED Pumpkin Pie Recipe - Need Substitute For Sweetened Condensed Milk
Ginsou replied to kvanrens1's topic in Gluten-Free Recipes & Cooking Tips
Well, we all know where to purchase Coco Lopez now....I found it in the liquor section of the supermarket yesterday. When I first saw it several months ago, I must have been looking for Redbridge beer. I have made it a habit to just browse up and down the aisles...you never know where or what you will find! -
Gluten free Rice Chex does not have soy in it....at least not on the west coast where I live...I'm also soy intolerant.

Oh wow, that's why I couldn't find it....it's used for Pina Coladas! -
Carol Fenster's book, 1,000 gluten free recipes has a pie crust recipe similar to Bette Hagman's....has anyone tried Carol's recipe that is on page 587? Just curious.
-
I'm surprised no one has come on board with Bette Hagman's pie crust recipe. Last week I paid $5.00 for a frozen store bought gluten free pie crust, and it was terrible. I ate the filling and my husband choked down the crust. Back to Bette Hagman's recipe for me.I double this recipe for a generous 2 crust pie because I find this recipe a bit too short on...

ARCHIVED Pumpkin Pie Recipe - Need Substitute For Sweetened Condensed Milk
Ginsou replied to kvanrens1's topic in Gluten-Free Recipes & Cooking Tips
A recipe was posted today for "Easiest Dairy Free Condensed Milk" on the website www.Wholenewmom.com. I would purchase a can of whole fat coconut milk...Thai Kitchen brand...add sugar, and boil it down as mentioned in the article just before the actual recipe for the easier version. Cream of coconut is found in some natural food stores and I once saw some... -
ARCHIVED Cupcake Wrapper Problems
Ginsou replied to Mizzo's topic in Gluten-Free Recipes & Cooking Tips
I make King Arthur gluten-free Muffins quite often, and the directions on the package say to line the muffin pan with greased paper muffin cups, but the King Arthur chocolate cake mix says to use (ungreased) cupcake papers in a muffin pan when making cupcakes. I've never greased paper cupcake liners in my life, and am not about to start. Both my King... -
ARCHIVED Gluten Free Bisquick
Ginsou replied to Medcoder03's topic in Gluten-Free Recipes & Cooking Tips
Gluten free Bisquick and King Arthur are staples in our house, always have to have several packages on hand. -
Do you use paper liners in your pan? I live at 4000 ft. and have not had any problem with any gluten free products burning, including muffins. I always use liners, just a habit. Perhaps your muffins were too close to the bottom of the oven...a middle rack should be used. I'd also try a different recipe...perhaps the recipe you used just wasn't meant to be...

ARCHIVED Rice Dream Milk
Ginsou replied to JaneWhoLovesRain's topic in Gluten-Free Foods, Products, Shopping & Medications
Wow, you are right, Rice Dream is now advertising that their product is gluten free, at least the packages in my local supermarket have the symbol on it. I know up until a few months ago, this symbol was not on their packages because I'm always browsing the special diet sections looking for something new that I can eat safely. Somewhere on this forum I read... -
ARCHIVED Rudi's Slider Rolls
Ginsou replied to Celiac Julie's topic in Gluten-Free Foods, Products, Shopping & Medications
Yes, Rudi's makes regular wheat containing products in addition to gluten free products...I almost caught myself purchasing the wheat product at one time. I love Rudi's products...am waiting for the day when/if they produce a gluten free English Muffin. Love their cinnamon/raisin bread. -
ARCHIVED Aspartame
Ginsou replied to Debra Adkins's topic in Gluten-Free Foods, Products, Shopping & Medications
Aspartame also bothers me...gives me diarrhea....I had no idea what was causing my problem until my husband mentioned not to buy a certain product because it gave him D....it contained aspertame. -
ARCHIVED Rice Dream Milk
Ginsou replied to JaneWhoLovesRain's topic in Gluten-Free Foods, Products, Shopping & Medications
Rice Dream does have gluten in it....small amounts are not required to be listed per the FDA. In the 3 years that I have been "checking" the Rice Dream containers, none of them have ever had gluten-free listed on them ,with the exception of some small travel packs that clearly had barley listed.Other people have called the company and have been told yes,... -
ARCHIVED Stinky Gluten Free Bread
Ginsou replied to alwaysamazed's topic in Gluten-Free Recipes & Cooking Tips
Are you perhaps smelling yeast? When I make a homemade gluten free bread, I can smell the yeast in it...but when I purchase commercial gluten free bread I do not notice the yeast smell.
