  1. Coconut milk in a carton by So Delicious comes in different flavors....original, unsweetened, vanilla flavored, etc. so you get different "tastes". I would think that coconut milk that comes in a can would have more coconut flavor. I'm lactose intolerant, and made some blueberry ice cream recently, and altho the ice cream had an excellent taste to it, I...
  2. I have a Zojirushi bread machine Model BCC-X20 and a Cuisinart stand mixer Model SM-55. I can honestly say my stand mixer gets the most use. I'm also able to purchase both Udi's and Rudi's bread locally. I have never been able to find a recipe that I'm really crazy about that comes close to Rudi's or Udi's bread. I did make a loaf of King Arthur white bread...
  3. The Betty Crocker website does limit coupons...check their website at the beginning of each month for coupons.
  4. I use Spectrum and dairy, soy, free Earth Balance (Red container). and canola oil as shortening substitutes.
  5. I have plenty of gluten free bread crumbs available...will have to make this my next experimental baking project. I don't have a weight problem, so always have cakes, brownies, or cookies on hand.
  6. I've used expired things before....and would use it if it looked ok and smelled ok. If the can is not swollen or bulged at the top. Wouldn't serve it to anyone else, tho.
  7. I know 85 cents isn't much, but www.bettycrocker.com has a coupon available this month for Bisquick Gluten Free Baking mix. I use this mix all winter long for pancakes and waffles because of the convenience. The coupon expires 12/5/2011.
  8. Daiya cheese is a wonderful substitute for cheese....I'm lactose intolerant and soy intolerant and found this cheese substitute about a year ago in my local natural food store. It comes in mozzarella, pepperjack, and cheddar...and it melts. and can be frozen.Pizza is on the menu tonight.Oddly enough, I did NOT find it being sold at Whole Foods...at least...
  9. The Sunday edition of my local newspaper had a recipe that sounds quite interesting....it uses 10 eggs...when eggs are on sale, that's when I usually make angel food cake. Go to www.relish.com, search for Chocolate Walnut Cake for the photo and recipe. I have not tried this yet. Part of the article is as follows: Not quite chocolate, coffee or vanilla...

  13. I've had no "aftertaste" when using canola and safflower oil.
  14. Thanks for the info.....I love King Arthur mixes and as I travel during the summer, I check every supermarket in every town and have enough KA mix to last me 6-9 months. I have a rewards card with the big A and since I order fairly often from them, I use my rewards credits to order my special diet supplies....it kind of takes the sting out of the cost of...
  15. I use Earth Balance soy, dairy free butter substitute in the red and yellow container for all my baking....especially good when used with Betty Crocker and King Arthur mixes...has never failed me. I also use Spectrum dairy, soy free shortening for baking. Spectrum now has a butter flavor shortening, I have purchased it but have not used it yet.I use So Delicious...
  16. I purchased the King Arthur Gluten free multigrain bread mix directly from the company, and hope to try it within the next few weeks. It's still too hot where I live to bake (yes, I could turn the A/C on) but the main reason is I have little room left in the freezer. All my KA food items have turned out fantastic.
  17. I've used a recipe similar to this and it was very, very good. I'll add this to my "to do" bread recipes. I have 3 gluten free multi-grain recipes on my to do list...King Arthur, Jules, and this one. Am waiting for cooler weather.
  18. I've used gluten free King Arthur many times and have always had excellent results.
  19. I make cupcakes (instead of cakes)at 7500 ft. with excellent results...both Betty Crocker, and a few days ago Pamela's Chocolate Cake Mix.I usually have to add only about 2 minutes to the cooking time. I like a cake- like cupcake, and used 3 eggs as recommended by Pamela's.
  20. Do you have the model number available? I was thinking of a Cuisinart Burr grinder, but may change my mind, and I have a Costco membership. I don't need a grinder, but would like to have one to add to my collection of cooking items that I will need to use for the rest of my life. I purchased the most delicious home made pumpkin cake at the Free Market in...
  21. Earth Balance dairy, soy free spread works out fine. Your grocery store may be able to special order it for you.I also use coconut oil as a butter substitute...great on veggies and corn-on-the-cob.
  22. Creamy Herb Dressing 1 cup rice milk 1 teaspoon salt 2 teaspoons onion powder 1 teaspoon xanthan gum 1/8 teaspoon garlic powder 1 1/2 teaspoons honey 1/2 cup oil 1/2 teaspoon parsley flakes 1/8 teaspoon dill weed 1/16 teaspoon sweet basil 2 Tablespoons lemon juice In your blender, blend rice milk, salt, onion powder, xanthan gum, garlic powder...
  23. I use my blender to make my brown rice flour mixture finer....I run the flour thru a few times and make sure it is well mixed, and is not staying at the bottom of the blender. I have thought of purchasing a Cuisinart Burr Mill....perhaps in the future I may. I honestly don't think that paying the high price for a superfine blend, is worth it. I had purchased...
  24. Purchase some Betty Crocker gluten free cake, brownie,or cookie mix at the supermarket.....no adjustments are needed for high altitude. I purchase mine at King Sooper and Safeway. Namaste Spice Cake mix also comes out perfect....I'm at 7500 ft. and have not had a problem with baking.Vitamin Cottage sells many gluten free mixes, including Namaste. I've never...
  25. I also have the Annalise Roberts cookbook, and use her chocolate chip cookie recipe all the time...for some reason I have to add about 1/2-3/4 of a cup of flour mixture to her recipe....maybe because I have to substitute Earth Balance, or maybe because I live in a dry climate at altitude...the cookies are so good my gluten eating husband gobbles them up,...
