  1. I'm also wheat/soy intolerant and jerseyangel has a really good substitute. Make sure your beef broth is gluten free!!!Kitchen Basics, Rachael Ray and Walmart GV are gluten free.I find balsamic vinegar adds a good flavor. Here is a recipe from About.com:Chinese Food. Make substitutions as needed. Soy Sauce Substitute 2 Tablespoons beef broth (gluten...
  2. Rice Dream has always made me sick. At one time the package said it contained a small amount of barley...something like 0.03% ppm. I believe the FDA does not require that a company list a small amount of gluten in a product. I'm barley intolerant, and have stopped drinking this product. I had noticed that some packages listed the barley, others packages did...
  3. Thank you for this recipe. I, too, have been searching for the perfect ginger/molasses cookie. Outside the Breadbox in Colorado Springs, CO bakes the most delicious gluten free ginger cookies I have ever tasted. I have been enjoying them all summer long, and now am returning home with some of them in the freezer. My next cooking project is to try to come...
  4. Several people seem to give the thumbs up to Tom Sawyer.....I have decided to give this product a second try. The first recipe I tried was pancakes, and they were not good at all. Since this product originates in my home town, I will give it another try.....bread or pizza crust. I now have started to grind brown rice flour in the blender.....make my own...
  5. Several years ago I purchased Van's Waffles, and they were fantastic. I now have a serious problem with soy,and dairy, so I can no longer eat Van's. I really miss them. Until you can come up with a good "from scratch" recipe, Van's will get you over the hump.
  6. The products you are looking for can be purchased at a natural foods store or Asian market.....brown rice flour should be available at a large supermarket that carries Bob's Red Mill products......but since these ingredients are specialized, supermarkets do not carry a full line. They can be ordered on line....but shipping is an added expense. Yes, guar gum...
  7. While reading some information on a cooking group that I belong to (NOT gluten/soy/dairy free!) I discovered that Prevention Magazine has a website that has hundreds of specialized recipes. Check out their website Prevention.com and then do a search on " wheat/gluten free", or "dairy free", or" soy free" and the search engine will bring up thousands of recipes...
  8. Flax is a natural laxative, and I find that eating Perky's Nutty Flax Cereal every other day keeps me normal. There's always the old standby....stewed prunes. I alternate between diarrhea and constipation, depending on what I have been eating lately.....be careful not to "overdose" on the flax or prunes, otherwise you'll be looking for a remedy for diarrhea...
  9. Amyleigh0007.....funny thing, my nurse practioner accepted the Enterolab and food allergy tests (blood, not scratch tests)immediately without question. My endo doc is not so sure.....she still would like to see villi damage for an "official" diagnosis. I have so many food issues, there is no way I would make myself sick on purpose for a more official diagnosis...
  10. The only details I know about a hiatal hernia is that it is quite common, mostly in older people (that's me). It causes burping, hiccups, heartburn, uncomfortable full feeling. You seems too young to have this problem, but there's always the exception. It's possible you may be gluten intolerant, with no intestinal damage. It's possible another food is...
  11. Guess I'll answer my own question.....their yellow cake mix made 30 cupcakes and they were delicious! Have not tried the other mixes yet, but I did place another order for their mixes. The owner of this bakery is a Celiac herself. Will experiment with Expandex when I receive Carol Fenster's newest book which has some Expandex recipes.
  12. I'm not familiar with European tuna....my guess would be the tuna you mentioned only includes the ingredients listed. Soy is a vegetable, and does not include gluten. I'm soy intolerant, and that is why I have to analyze labels so carefully. Soy makes me very ill. A product that lists vegetable oil as an ingredient usually does not say what the vegetable...
  13. Darkhorse (and others) Vitamin Cottage/Natural Foods at 7690 Academy sells UDI's bread in the frozen bread freezer, top right side near Aisle 10--$4.45 a loaf...also 3 kinds of Udi's muffins. They also sell 3 flavors of Kinnikinnick donuts...cinnamon, chocolate dipped, vanilla dipped. Whole Foods on Academy across from Vitamin World has a good supply...
  14. Darkhorse....yesterday I was at Whole Foods on Academy Blvd. and they sold Udi's white sandwich bread and whole grain bread (both gluten, soy, dairy, nut free). The bread was much cheaper at Whole Foods, and was in the gluten free freezer for $4.99. King Sooper in Monument was more expensive...about $6.29. Have not checked for it at KS in Colorado Springs...
  15. Was the pie crust frozen? If so, was it completely thawed out? Sometimes frozen item packages are not air tight and get freezer burn and dry out. I'd try a little oil or water to moisten it. I've had no problem with Bette Hagman's pie crust recipe, made with vinegar, and never buy the frozen crusts.
  16. Try putting the top crust between 2 sheets of saran wrap, roll it a few times with a rolling pin (to make it stick to the saran wrap)remove the top layer of saran wrap, then put your hand under the bottom saran wrap, bring it to the edge of the pie plate, and flip the top crust onto the pie, then remove the saran wrap. It may take a few tries to be able...
  17. Jerseyangel...so glad you mentioned hiccups. I've had hiccups off and on for the past 3 years. A recent endoscopy showed I had a hiatal hernia. My gastro doc also wanted me to go back on gluten in order to do another endoscopy....(the gold standard). I refused. An endo one year ago showed no damage to small intestine.....I had been off gluten for almost...
  18. OMG Cooperfamily4......I've been sick for the past two weeks and now I know why.....my jar of Best Foods mayo does not list soy after the words natural flavors. Hellmann's mayo uses the label "Best Foods"west of the rockies, and that is the brand that I have been purchasing. I travel, and I know for a fact that Hellmann's on the east coast did list soy as...
  19. I recently started drinking Rice Dream again, after giving it up for a while because I suspected that it made me sick. In the past the carton would contain the words that it contained a minute amount of barley. Some cartons (travel size) had that wording, others did not. The past few weeks, something has been making me sick, and once again, I suspect...
  20. I spend the summer months in Monument and just discovered this product yesterday. I purchased the bread after reading some good comments on it, and it is the best bread that I have ever tasted, and I have tasted every brand that there is, and have baked quite a few recipes that were just OK. I'm close to tears this morning. This bread is light, crusty on...
  21. I'm wondering if anyone has had any experience with products purchased from Little Bay Baking Co. in New Hampshire. I stumbled upon their website, and since I have multiple food allergies, I ordered their sample pack...several products are gluten, wheat, yeast, soy, casein and dairy free.....all of which I'm allergic to. I'm also interested in trying Expandex...
  22. SlamDuncan, great to hear you will be seeing a doctor. 30 years ago I became ill, and was diagnosed as being lactose intolerant. I stopped dairy, and drank Lactaid milk and took lactose enzyme pills for about 30 years, and still was sick. About 15 years ago I had excruciating pain and my gastro doc said it was "probably" IBS and he have me some blue pills...
  23. Yesterday at an altitude of 7,900 feet I tried the Betty Crocker yellow cake mix and made cupcakes...they came out really, really good. I used Spectrum palm oil shortening as a butter substitute and used a coconut milk frosting, topped with flaked coconut and a maraschino cherry. Non-celiac husband has eaten more than his share of them. The next time, I will...
  24. None of my machines have a special setting to interrupt the bread cycle in order to have just 1 knead and 1 rise, and I think that may be part of the problem. I'm ready to buy a 4th machine...one that can be manually programmed for 1 knead and 1 rise. I do have a "quick" setting on 2 machines, will have to check the manual to see if that cycle may be a...
  25. You could also try adding crushed hard peppermint candies, or M&M's, if the ingredients are not a digestive problem.
