  2. I also discovered this recipe about 3 weeks ago, and it is fabulous!! I substituted almond extract, and added fresh cherry halves, and some slivered almonds. I made it with an expensive can of Thai coconut milk, and also Imperial Dragon Coconut Milk from Walmart ($1.32). In my opinion, there was no difference in the taste. The cheaper brand worked just fine...
  3. Today I purchased BC cake mixes.....they use 3 eggs, and butter. I'm also allergic to dairy and soy so will try the cake mix with Spectrum. Cookie and brownie mix have soy in them, and the cake mixes say "may contain soy ingredients". Oh well, I'm happy making my own from scratch recipes and Namaste products have worked out very well for me.
  4. Peace.....the best gluten/soy free chicken stock I have found is natural Kitchen Basics brand. I buy the 8 oz. boxes, although they come in larger 32 ounce boxes also.   5. I also use Tinkyada brown rice pasta and it always comes out perfect. Adding a bit of oil to the water keeps it from sticking, and rinsing it in cold water when cooked stops the cooking process, so it won't get mushy. It even tastes great the next day. I've also cooked corn pasta and other brands with the same excellent results.

  7. I, too have been thinking of buying a grinder, only my thoughts were to use it to produce a superfine flour mix. I've just started using superfine brown rice mix and superfine almond. The prepackaged mixes are pricey. We live for 6 months in the southern desert in a motor home and have solar panels that serve our needs very nicely....with backup generator...
  8. When my children were younger they used to laugh at me when I would throw a strand of pasta on the wall to check it for doneness!!! Now they also do it. If it sticks, it is done, if it falls off, it isn't. You can also take a strand and simply taste test it.

  16. My first attempt came out slightly dry, but very good. There was no egg or cocoa taste at all. I'll use a bit less flour next time, and cook for a shorter period of time. I left out the cocoa, and subbed an Analise Roberts flour mix for all flours and the result was a sponge cake like consistency, perfect for strawberry shortcake.
