Your mom should consider being tested for lactose intolerance, and allergy to soy and milk /casein. My lactose intolerance symptoms are very painful....abdominal pain that radiates to the back and sometimes between my shoulder blades. My soy allergy also causes back pain and nerve pain in my left hip and leg.......very strange! Doctors do not like to...

I'm also a Subway fan. I've solved the problem.....I buy a Subway sub and put the "fixings" between 2 corn tortillas. Usually bring the sub home, so I can warm the tortillas and use my special mayonnaise. Another time I purchased some corn tortillas in Walmart and went into the Subway area of the store and simply sat there and transferred the fixings to...

ARCHIVED Why Does Bread Dough Climb Beaters?
Ginsou replied to susiequsie's topic in Gluten-Free Recipes & Cooking Tips
Susie, I'm guessing the new Sunbeam is not a good product to consider buying for gluten free mixing.I'm glad you were the guinea pig for the rest of us who were considering a Sunbeam. My old Sunbeam was purchased at a thrift shop, and most likely is 15 years old. A new stand mixer isn't in the budget right now, but I think I'll buy myself a KitchenAid... -
ARCHIVED Why Does Bread Dough Climb Beaters?
Ginsou replied to susiequsie's topic in Gluten-Free Recipes & Cooking Tips
I use a KitchenAid portable hand mixer that has dough hooks, and have not had a problem with it. Model KHM5APWH7, cost approx. $49. I also use an old Sunbeam stand mixer that has dough hooks, and have not had a problem with dough creeping up. Is it possible the bowl you are using is too small...or too large? My old Sunbeam has 2 different bowl sizes, and... -
ARCHIVED First Try At Bob's Potato Quick Bread
Ginsou replied to home-based-mom's topic in Gluten-Free Recipes & Cooking Tips
I've had excellent success with Bob's "Our Favorite White Bread For Bread Machines" recipe that is on the back of the Potato Starch package. For some reason, don't know why...just experimenting..I sifted the flours twice and the bread was excellent....rose to within 1" of the pan top. I also learned the hard way when making gluten free bread...the $10... -
ARCHIVED Soy, Dairy And Gluten Free Margarine
Ginsou replied to RissaRoo's topic in Gluten-Free Recipes & Cooking Tips
I've used Spectrum palm oil as shortening and butter substitute, and have had very good results. I also use Nutiva Organic Extra Virgin Coconut Oil on rice, veggies, sweet potato, corn on the cob.....expensive, worth every penny. The local natural food store had a container of Nutiva coconut oil....it was $36 and was in what looked to be a gallon container... -
ARCHIVED Blueberry Bundt Cake Recipe
Ginsou replied to Linda2566's topic in Gluten-Free Recipes & Cooking Tips
Michael Eberhart's "Gluten-Free and Wheat-Free Gourmet Desserts has a lemon-blueberry bundt cake recipe on page 28 that is to die for. It uses sour cream, and I'm lactose intolerant, so have not been able to critique this recipe. The recipes that I have used from this cookbook have been excellent. Delivery on an order from him is very fast. -
ARCHIVED Anyone From New Hampshire?
Ginsou replied to Christina725's topic in Introduce Yourself / Share Stuff
Welcome to the forum. I'm no longer from (Dover) NH, but there is at least one NH member on the forum.....Mistilyn. She submitted a recipe on Sept. 12, 2007 for Sorghum Flour Bread. I'm also lactose intolerant in addition to gluten intolerant. I had additional testing done and also have a serious problem with soy......and casein. You might want to have... -
ARCHIVED Frustrated, Scared, And Exhausted
Ginsou replied to SickABeinSick's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Your symptoms certainly sound like celiac and/or lactose intolerance. I remember those days many years ago when I also was in excrutiating pain rolled up in a ball and holding my breath....the pain was on the level of childbirth pain. A simple lactose intolerance test will determine if lactose is a problem. Alternating diarrhea and constipation and gas have... -
ARCHIVED Enterolab Testing
Ginsou replied to cdog7's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My blood tests for celiac were negative. If I hadn't had the Enterolab tests done, I never would have known that I also have the double genes, and also have a casein and soy problem. I had stopped gluten on my own, and still was in a lot of pain and ended up in the emergency room with no insurance coverage. All their tests were also normal. I had replaced... -

ARCHIVED Does Anyone Have A Good Beer Batter Recipe?
Ginsou replied to Ginsou's topic in Gluten-Free Recipes & Cooking Tips
I have Mike Eberhart's book and unfortunately am lactose intolerant so can't use the recipe. My mouth waters just looking at the photo of the onion rings. His book is excellent...am so glad I purchased it. Just yesterday I tried this batter and my wheat eating husband couldn't stop raving about it. I used Redbridge beer and tilapia fish fillet. I will... -
ARCHIVED Help! I Am Very New To This Disease And Feel Overwhelmed!
Ginsou replied to twinflame2's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
twinflame.....perhaps there is a food pantry or food bank in your area that you may be able to join.I was low income for many, many years and raised 2 sons by myself, so I know what you are going through financially. Even with food stamps, and government surplus food, life was tough. There are many more options available today than there was 30 years ago.... -
ARCHIVED Buying Flour And Baking Ingredients...where To Start?
Ginsou replied to stolly's topic in Gluten-Free Recipes & Cooking Tips
Clabber Girl baking powder is gluten free..... For flours, if you are new to this, I would suggest a prepared mix (expensive) to get you started. Sources for these products are Whole Foods, Wild Oats, natural food stores, some supermarkets carry Bob's Red Mill products,Asian markets (inexpensive), ordering on-line. When you become more familiar with gluten... -
ARCHIVED My 2 And 1/2 Year Old Daughter Has Celiacs
Ginsou replied to Melimba2002's topic in Parents, Friends and Loved Ones of Celiacs
Welcome to this forum. Jello gigglers can also be provided for a treat. I don't have children to cook for, so don't have any real good advice like the other experienced Moms on this website. There is a recipe for gluten free oreo cookies (look like whoopie pies) on the "recipezaar" website. Recipe #186848. "Lame Advertisement" also threw me off when I first... -
ARCHIVED Pamela's Baking Mix For Cookies
Ginsou replied to celiac-mommy's topic in Gluten-Free Recipes & Cooking Tips
The chocolate chip cookie recipe is on page 89 of Gluten-Free Baking Classics....the photo of the finished product is on the back cover. I used ordinary brown rice flour that I purchased at Vitamin Cottage. Many recipes in this book use millett flour, which I just ordered from Bob's Red Mill. Brown rice flour can also be ordered from Bob's Red Mill. ... -
ARCHIVED Help With Constipation
Ginsou replied to JustMe75's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I also get plenty of roughage, but for some reason constipation has always been a problem for me. There are times when I find 2 stool softeners in the evening work wonders. 1 doesn't do it...I need 2. I buy the Walmart Equate ones.....very inexpensive ...docusate sodium 100mg. Get the ones without a laxative stimulant ingredient! I was also taking Flora... -
I'm originally from New England and never knew what country fried steak was, and never tasted it until about 6 years ago in Conroe, Texas. It was delicious. I'm lactose intolerant, and was sick from it, but still enjoyed it. That was before being diagnosed celiac. It appeared that the chef used cubed steak, which can be purchased already "pounded".....at...

ARCHIVED Pamela's Baking Mix For Cookies
Ginsou replied to celiac-mommy's topic in Gluten-Free Recipes & Cooking Tips
I also recall reading somewhere cautioning about using butter in cookies.....I think I read it in a new gluten-free cookbook I just received. I can't do dairy, and have switched to canola oil and Spectrum shortening. I just made a batch of chocolate chip cookies from Annalise Roberts Gluten-Free Baking Classics cookbook and they were just like I used to remember... -
ARCHIVED Rice Dream Has Barley In It!
Ginsou replied to Ginsou's topic in Gluten-Free Foods, Products, Shopping & Medications
I had switched to Rice Dream because I found out after additional testing that soy was also a huge problem for me. I find Vance's Dari-Free to be the best drink and it comes in different flavors....I also have purchased Better Than Milk Rice beverage....lactose,caseinate,gluten free. The Better Than Milk Rice beverage was hard to find....I will simply order... -
ARCHIVED Enterolab
Ginsou replied to silk's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I would definately have the Enterolab tests done. My blood tests for celiac, ordered by my gastroenterologist, were negative. I had no insurance, and eventually ended up in the emergency room....everything I ate was making me sick and I was in a lot of pain 24/7. I learned of Enterolab thru this website and had the full panel done.....in addition to double... -
I don't understand why your Dr. said there is no test for intolerance. Of course there is. In 1979 when I developed gas, constipation, severe abdominal pain, diarrhea, I was tested for lactose intolerance. It involved drinking lactose, then monitoring my blood and urine for about 6 hours. It was positive. Now, the test is simplified by simply drinking lactose...

ARCHIVED Rice Dream Has Barley In It!
Ginsou replied to Ginsou's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks for the heads up, I'll order some. I like a variety of things to be able to take on airplanes, 4 wheeling, kayaking, hiking, etc. Whoops, it has whey in it....can't have it. Ordinary supermarket juices in travel packs will do. I'm now home and my 64 oz. container of Rice Dream which was at home, says gluten free.I'll contact the company and... -
ARCHIVED Rice Dream Has Barley In It!
Ginsou replied to Ginsou's topic in Gluten-Free Foods, Products, Shopping & Medications
I've been having some poblems for about 6 weeks, and for the life of me did not know what it was. I suspected pine nuts, that I had been eating. Forget the Rice Dream, I'll go back to Vance's Dairy Free, which I like. Guess I should contact the company to make sure their product does not have any ingredients not listed that may bother me. And I will contact...
