  3. Well said!!! I'm also retired and was just diagnosed with gluten,casein,soy, intolerances in addition to the lactose intolerance I've had for many years. I travel full time in a motor home, so I always have my kitchen with me. We now go online and find the nearest large natural food store in the area and make it our first stop when we reach our destination...
  4. I usually order an iced tea, or a salad with no croutons,no dressing, and bring my own allergy free dressing in my purse. If I get strange looks from the waitress, I simply say I have LIFE THREATENING food allergies, and that usually does the trick. A white lie doesn't hurt once in a while.....they pay attention when you use the words life threatening. But...

  7. I'd go for the full Enterolab panel also. I got my (positive) results, and still had some problems and had additional tests done. Positive for casein and soy!! A complete surprise.
  8. Yes, using both ingredients sounds right. Years ago before I had food "issues" I made some wonderful chocolate chip cookies and the recipe used both butter and solid shortening. Unfortunately, my one experience with Gluten Free Pantry pie crust was not good. It was all crumbly and could not be placed into the pie pan properly. When baked, it was all crumbs...
  9. Which cycle did you use? Do you have a gluten cycle or a 1 rise cycle on your machine?
  10. Another book would be: Cooking Free, by Carol Fenster, PhD. This book has 200 recipes for people with multiple food allergies including alternatives to gluten,dairy,and sugar. I've purchased most of my books used on-line thru Amazon. Some of the new books are shipped free and the price is very reasonable. Your local library may also have many allergy...
  11. The chicken may have been gluten free, but was it lactose/dairy free? I noticed you have a problem with lactose....I recently discovered the lactase enzyme that I had been taking for about 10 years has wheat in it, and also soy!! The company has recently changed their ingredients, and I'm wondering if these ingredients were in it all along thru the years...
  12. The dough climbs up my hand held mixer and my older Sunbeam stand mixer also. Holding a spatula at the top of the beaters does help somewhat. The next time I make bread, I'll use the regular beaters for the wet ingredients, then switch to dough hooks for the dry ingredients and see how that works. I'm not in the market for another stand mixer at present...

  14. I've had great luck using Arrowhead Mills Brownie Mix.....at 7,500 ft and also at lower altitudes. The were so moist and delicious, I haven't tried other brands or recipes yet........well, just one...Pamela's...I misread the directions and messed up. I ate them anyway.   15. I also tried to make some baguette type rolls with Chebe, and it was a disaster. I made bread crumbs from the results. People have raved about this product, I'm not really impressed. Perhaps like you, I also may have done something wrong.

  25. Did you know that Enterolab keeps your specimen for 6 months, and if you want an additional test it can be done ? I 've had lactose intolerance for 30 years, and tested positive for Celiac. Eliminated gluten from my diet. Still had some problems....and tested positive for dairy, and also soy!!! Most of my gluten free products also had soy in them......mayonnaise...
