I cook from scratch, never eat anything with gluten ( A Gut that needs special attention seems to affect many who suffer from celiac) .   6. I was diagnosed with severe Celiac in 1980 . I was in the hospital for a long time. They finally took many tests and I was diagnosed with severe Celiac Disease. It took me 3 years to get my Gut to where I could eat regular meals. I ate beef 2-3 days a week, chicken for the other days.... Not large amounts!   8. I was diagnosed with Celiac disease in 1980. There were no gluten-free products nor was there informed guidance. Since then, many, many companies now make gluten-free food. However, I have always become very, very sick when eating one of the main ingredients in the majority of gluten-free foods - POTATO STARCH. I eat a potato, or anything with potato starch...
