  1. Ever since going gluten free, it's been a BIG pain finding good things to carb-up on (a training thing. One day of very low fat, high carbs). At first I thought it was easy, but this time I actually read the labels and found out most everything I was eating was pretty fatty. The only thing I could find this week was pancakes, cereal, and pasta. All of...
  2. Mine turned out great! I simply used about half to 3/4 of a quart of rice milk and melted about 24 slices of this fake cheese into it. The cheese was this lactose free, fat free casein stuff. The sauce thickened up pretty well and it was almost just like how my dad used to make it, except with a lightly chemical after taste. Which I'm sure would be...
  3. Cashews? Sounds interesting, but I'm trying to stay lowfat. This is a carb load for athletic purposes, and I'm trying to keep it low as possible. Is it pretty low fat?
  4. The only thing I could find was some dairy free/gluten free cheddar cheese. So what I have now is that and some macaroni. Would it be fine just melting the cheese onto the macaroni or are there any dairy free things I should add to make it more into a sauce? I was thinking melting the cheese with some tofu, but I didn't know how to go about that.
  5. Equal parts Extra Firm Tofu and Almond milk! I'm pretty sure it worked well. Add some sweetener too.
  6. *sigh* I just feel like getting this off of my chest. College is done, so I'm back home for the break with the news that I'm now/have been celiac and that I need to avoid gluten. Instead of understanding, my mom just tells me that it's all in my head and that the reason I'm always in so much pain is because I eat "weird". I guess eating unprocessed...
  7. Oh man... Here's what I posted on another board: So after either burning out on amphetamine, burning out from exam anxiety, becoming malnourished from celiac disease, or some combination of the above I decided to take a week off from the gym and my diet. Instead of eating really healthy, I've just been focusing on getting lots of nutrients in from less...
  8. Yes. Every week I eat a ton of carbs in one day to help me in the gym/daily life for the rest of the week. I'm chalking it up to vitamin deficiency for us. Celiac & Malabsorbtion go hand in hand, so it is likely. God.. what doesn't this disease do?
  9. Damn, that sucks. I follow a high fat (including high saturated) and moderate protein diet with veggies. So that's like all the fulfilling things right there. Whenever I eat grains or starch for my weekly carb load, the hunger is even greater and I feel like I can still eat even if my stomach feels uncomfortable.
  10. Does it ever get so bad you feel like you're dying? Right now I'm having: -I can no longer feel, and can barely use my hands. -Mood swings. Usually anger. -Upper back hurts like it needs to be cracked. -Stomach hurts. -Ball in pit of stomach. -Constipation -Hard time focusing. -Forgetting a lot. -Sometimes my vision will completely blur -Dizzy...
  11. I can't get full like I used to. Either I'm hungry, not that hungry, or unable to eat anymore and near dead. Maybe I'm hallucinating, but I thought there was an inbetween where it felt like the stomach was pleasantly packed but not too full. I haven't experienced that in forever.
  12. How about some almond milk? Almond milk, cocoa powder, and maybe something to thicken it. Possibly folded egg whites if that doesn't gross you out or cause you problems. Or maybe coconut milk could help thicken it up, but I wouldn't base it off of that. That stuff can be really nasty.
  13. I don't know about any parasites, but they don't seem likely. I might look into that eventually. The L-Glutamine seems promising. I remember taking that before, in a lifting stack. So even if it doesn't help with my stomach, which it should, it probably will help my lifting recovery too. Even if neither happens, I have a really cool bottle now to store...
  14. Are you sure? Are there any articles on this? Regardless, I want to do at leat one more so I can try some gluten-free goodies. I do lots of long distance walking and lift a few days a week so my glycogen definitely gets depleted. It would make sense that protein could help (can be converted into glucose)... but are you sure? Would it have any effect on leptin...
  15. Hey all! I've been reading these forums for the past few days and am pretty sure that I now have enough knowledge to live gluten free. Even if I don't have celiac's, it will probably be a healthier living anyway. Anyhow, I'll dive right in with my symptoms and see what you all think. About a year or so ago, I finally started eating healthy. I started...
