  1. I can't tolerate rice, soy or almond milks either (as well as most commercial icecreams). For me it turned out to be a sensitivity to carrageenan. If I buy rice milk without it, or Haagen Dazs icecream, I'm fine.
  2. You have just described my journey with migraines as well. I started out with ocular migraines and now I get the full blown pain migraines. I get them on day two of my period, if I get glutened and if I get highly stressed. This past month I had almost daily migraines. I was the communication person on the grade 7 grad committee and had to field all the stressed...
  3. If you can't find any, here's a recipe to try. Graham Crackers (Gluten-Free) 1 cup gluten-free flour mix*
  4. Here is a formula for mixing your own. You want four main types of flour in your mix-- Bodifiers-- Teff, Sorghum, Rice, bean flours, brown rice, quinoa, millet, amaranth, and cornmeal are a few options. These provide bulk and protein as well as the vitamins (if any, teff is a great source of vitamins). Modifiers-- Tapioca starch, cornstarch, potato starch...
  5. The grill is your friend. In the summer I grill everything, meat, vegies, potatoes even gluten-free french bread (heat the whole grill, turn off the burners over the bread and leave the others on to act like an oven - works brilliantly)
  6. I have a wing recipe that gets requested regularly. I make them in a wok and I've never had a real recipe. I brown the chicken wings in a hot wok with oil. While they are browning I mix 1/2 gluten-free soy sauce with 1/2 sugar (not healthy but Oh so good) and a shake or two of Thai sweet chili sauce or chop a few dried thai chilies and toss in (more if you...
  7. Found this baker listed in the Celiac Sprue Association Sacromento area site Azna's Gluten-Free Bakery Cameron Park (all gluten-free/vegan facility).
  8. Good to know.
  9. I made a great baked pasta dish last night. I roasted Italian plum tomatoes (cut in half and tossed in evoo), red, yellow and orange peppers, yellow pattypan squash, zucchini, sweet onion and garlic. Tossed in a bowl, throw in 1 cup creamy ricotta cheese, cubes of mozzarella cheese (or fontina), cooked Tinkayada penne and chiffonades of basil (I like lots...
  10. Potato Starch Sponge Cake (Gluten-Free) The following is a recipe for a Sponge cake made with potato starch and it is wonderful served with fresh fruit (sliced strawberries with a little sugar) and a whipped topping or ice cream. 8 eggs 1
  11. Nice sounding cake. I'll be giving this one a try.
  12. The key to a moist pork loin is to not overcook it. The following recipe is really simple and good. Pork Loin Roast with Cranberry Glaze RECIPE BY: evelyn/athens
  13. Blueberry Lemon Muffins 9 to 12 muffins These make the best blueberry muffins I have ever made. They peak nice and are so moist and tender just like at the bakery. I got the recipe from Bernard Clayton's Complete Book of Small Breads. Ingredients: 1 1/2 cups gluten-free all-purpose flour mix 3/4 tsp xanthan gum 2 teaspoons baking powder 1 teaspoon...
  14. check out Recipe Zaar's Evelyn from Athens recipes Open Original Shared Link She posts regularly on the Cookstalk Forum at Fine Cooking and her recipes are wonderful, especially the greek ones.
  15. I love fine cooking recipes. Have you checked out their web site? If you get the magazines you pay an extra $10 and can access all their recipes on line (or you can pay a monthly fee, pretty reasonable price, and get the same). They have a pretty good forum as well.
  16. You're welcome. When ever I find really great info like that I copy it and keep it (that way I don't have to rely on my memory, which sucks at the moment).
  17. I have the correct iron now and with time I will start to feel better. This was a real eye opener for me about how important it is to check ingredients lists. Lesson learned.
  18. I get it back with a vengence when I get accidently glutened too.
  19. I get heartburn and nausea when I have been glutened but there are some foods that will also do the same thing to me. Coconut milk is a real killer for me, which is a drag because I love coconut milk curries. I was gluten free for a few months before I was able to go off of my Pariet. Hang in there it will get better.
  20. I have been having alot of trouble tolerating iron supplements. I finally discovered Floradix and was tolerating it (I'm sure the first bottle was gluten free). I've been sick for over a week now with joint/muscle pain, nausea, constipation, migraines, fatigue, gas and bloating. I thought that I had a virus. This morning before taking my iron I read the bottle...

  22. I find that gluten free cakes take longer to cook than regular cakes and will sink if not completely cooked through. They also need to cool in the pan for a while before being removed or they will fall apart (I learned this the hard way). Baking is a real art and unlike regular cooking needs to measured accurately. This is one time that winging it doesn't...
  23. Peanut oil and Grapeseed oil are too oils that are stable at high temperatures and are good for deep frying.
  24. Here's a guide to help you figure out the ratios. 1) You want four main types of flour in your mix-- Bodifiers-- Teff, Sorghum, Rice, bean flours, brown rice, quinoa, millet, amaranth, and cornmeal are a few options. These provide bulk and protein as well as the vitamins (if any, teff is a great source of vitamins). Modifiers-- Tapioca starch, cornstarch...
  25. I found a blog site that used this recipe Open Original Shared Link . She subbed Bob's Red Mill baking mix for the flour in the recipe and was happy with the results. I suspect any baking mix (or mixing your own) would work.
