Okay, my "Manna from Anna" bread mix just arrived, and reading the ingredients list it calls for 1 tsp gluten free dough enhancer (optional). What on Earth is this and where do I find it? I'm looking forward to trying this but I don't have a clue what this ingredient is.

The "germ" of the wheat is the emryo of the wheat seed. Sort of like the yolk in an egg. I have no idea why they would say it is gluten-free if it has this in it, it would be like saying something is Vegan when it has egg yolks in it. -

I think the level of caution is very dependant on the person. I don't eat anything I know or suspect to have gluten in it, but I use the same plates, pots, etc in my house except for wooden spoons which are designated specifically gluten-free or non-gluten-free (and also one for vegetarian food only since we have vegetarian friends). Yes, this same thing happened to my sister. I didn't know about it until I was found to have the condition, when my mother suddenly remembered that my older sister had to go wheat-free when she was a child but later "grew out of it". This was just how it was handled back then.

I find that the tablets don't do much good for me. Try drinking Lactaid milk that has been pre-treated. If you still have problems, then it may be casien that is causing your problems; or maybe it's something else entirely.

This could also be a problem with your gall bladder/bile duct. Bile is used to break down fats, so it is possible that it is not doing the job for some reason. I guess you never know, I just wanted to be the odd one out and state that I've always had nails that are tough as, well, nails. So I suppose everyone is just different. -
Lactose is a good thought, it might also be fructuse (fruit sugar). For me, I get gas from vegetables like onions, cabbage and broccoli. Beano is a good solution to this problem; I take about 5 tablets with every serving of these vegetables. Also, taking a Gas-X before bedtime can be helpful.
