ARCHIVED Need A Recommended Sub For Beer Can Chicken.
catfish replied to kactuskandee's topic in Gluten-Free Recipes & Cooking Tips
I know that there are gluten-free beers out there but don't know the names. You might try making this using a white wine, maybe a marsala. Just pour it into a can and cook according to your recipe. It won't exactly be beer chicken, but it should still be pretty tastey! -
ARCHIVED Couple Of Questions For Now :)
catfish replied to 2009's topic in Coping with Celiac Disease
Some not-so-obvious mistakes I made at first that you can avoid; If it says' "Wheat Free," that does NOT mean gluten free. Spelt tortillas were my mistake here. Spelt and kamut are not frequently mentioned in the bad grains to avoid but they are frequently found in whole foods products and are not gluten-free. Corn Flakes, Rice Crispies, and all... -
ARCHIVED Rice Wrappers
catfish replied to sweetie101282's topic in Gluten-Free Recipes & Cooking Tips
I've only tried these once (for gringo style chiles rellenos) with pretty good results. I soaked them in beaten eggs and water for just about 20 seconds before wrapping. I deep fried them in hot canola oil, about 160F until crispy. Peanut oil would work too, you want a high-temp oil though. The higher temperature will keep them from getting oily- the... -

ARCHIVED New At This...lots Of Questions!
catfish replied to anerissara's topic in Coping with Celiac Disease
Regarding the white spots on fingernails, I have heard that these are the result of physical trauma to the cuticle during fingernail formation. This "trauma" need not be anything severe, just a little whack of the fingers against a wall for instance, something that you'd just shrug off and think nothing of. I have heard though that they can also be caused... -
ARCHIVED Obstacles Faced By Celiacs
catfish replied to ResearcheringCeliac's topic in Coping with Celiac Disease
Typical scenario; I am out running errands with my family, it's getting too late to cook at home (everything takes longer to cook gluten-free since instant foods like hamburger helper aren't an option) so we'll find a place to eat. I look over the menu and find one or two things that might be gluten free. The waiter comes over and asks... -
My symptoms are cumulative, that is to say; If I eat one serving containing gluten, I won't feel very well for about a week. If I keep eating it, I will feel worse and worse, and for a longer time. I won't react immediately nor violently to it, it's more like a long-term poisoning effect. The way that most Dr.s like to diagnose celiac is to do a biopsy...

ARCHIVED I Tried It! Manna From Anna...
catfish replied to MichelleC's topic in Gluten-Free Recipes & Cooking Tips
I got the spring roll wrappers at an Asian market. It does say "Banh Trang Deo" but for all I know that might say "Spring Roll Wrappers" or it could be the actual brand name. The ingredients are simply tapioca flour, water, and salt. I might try the experiment again sometime using some modifications, perhaps a slightly drier dough with a rice paper... -
ARCHIVED I Tried It! Manna From Anna...
catfish replied to MichelleC's topic in Gluten-Free Recipes & Cooking Tips
I haven't had much luck making gluten-free cinnamon rolls. The best thing I've dreamed up was only a partial success at best, but I'll describe it anyway in case someone finds a way to make it work better. I took 1 batch of gluten-free bread dough (batter, whatever) and I spread a large spoonful onto a gluten-free spring roll wrapper. I added the butter... -
Whimsygirl, this might be your problem; you said that you have been going gluten-free and the test has come back negative. If you are not ingesting gluten, the test will always come back negative. The antibodies will only be present if you are have been ingesting gluten. In order to have a valid test, you need to be consuming gluten regularly prior to...

ARCHIVED Which Is Better? Corn Or Rice Pasta?
catfish replied to mwical's topic in Gluten-Free Recipes & Cooking Tips
I also have a ravioli mould and I make my own ravioli. My favorite is a mushroom/romano cheese recipe I made. It is hard to roll gluten-free pasta dough because it's very sticky and stretchy compared to normal pasta dough, but I found a recipe that works very well and a secret I've learned is to roll it with a Teflon coated rolling pin on a Silpat cookie... -
ARCHIVED Which Is Better? Corn Or Rice Pasta?
catfish replied to mwical's topic in Gluten-Free Recipes & Cooking Tips
I guess I'm a wet blanket when it comes to gluten-free pasta but I honestly don't like any of them. The best thing I've come up with is a recipe for homemade, but it is time-consuming to make it so I rarely do. Tinkyada gets my vote for prepared gluten-free pasta because it's easy to find and easy to cook, but I have a hard time calling it my "favorite... -
ARCHIVED I Tried It! Manna From Anna...
catfish replied to MichelleC's topic in Gluten-Free Recipes & Cooking Tips
This was the first gluten-free bread I had that actually gave me hope. I don't buy it much anymore, because I now have good recipes that are cheaper and at least as good. But I have not yet found a prepared mix that could compete with Manna From Anna. -
I'm lucky to live 5 minutes from an Outback Steakhouse. I've never had a problem there. I am also lucky in that my favorite restaurant ever, Carrabba's Italian Grill, now has a gluten-free menu as well. They are owned by the same company as Outback. Since they aren't exactly "cheap family dining", we now we eat out less often than before my diagnosis...

ARCHIVED Coffee/spice Grinders
catfish replied to loregon's topic in Gluten-Free Recipes & Cooking Tips
I burned out a few coffee mills, finally settled on a KitchenAid because it has large capacity, detachable cup for easy cleanup (dishwashable grinding cup). They all seem to get hot after more than a minute or two of grinding. -
ARCHIVED Does Anyone Bake Their Own Gf Bread
catfish replied to mwical's topic in Gluten-Free Recipes & Cooking Tips
I'm glad you tried the recipe and liked it! I forgot to type the rising step when I was posting that recipe, I just now edited my post to include it. I hadn't thought about tuna cans, good idea! I have a very small (about 4") round cake pan and I press aluminum foil into it to make several forms, that way I can make several buns at once using only... -
ARCHIVED Does Anyone Bake Their Own Gf Bread
catfish replied to mwical's topic in Gluten-Free Recipes & Cooking Tips
There are a lot of recipes out there, most are very good and some are actually great. A lot of it depends on your tastes; I wanted a softer, milder bread than many of the recipes I found. The recipe I ended up with and am very happy with is a variation of another recipe also from Bette Hagman. I modified it to fit my own taste, it is also inexpensive to... -
This is great! I already enjoyed eating at Carrabbas because they are so accommodating and easy to work with, not to mention their food is amazing. Having a gluten-free menu will just make it that much easier!
-
Debmidge, I do that with great northern beans! I grind them in the coffee grinder and then sift them through a stretched nylon to remove the bits that don't get ground fine enough, and use this in place of Garfava flour where I want something milder in flavor and color. It works great! Plus, it's cheap!

ARCHIVED Have Any Gf Recipes For Enchiladas Or Quesadillas?
catfish replied to Killarney's topic in Gluten-Free Recipes & Cooking Tips
I've never run across a corn tortilla brand that wasn't gluten-free. I use Mission brand usually, and never had a problem. The sauce I make myself- here's a great enchilada sauce without flour, much better than ones with flour IMO. In a saucepan, sautee 1/2 small yellow onion and 2 cloves of garlic (or use a little garlic powder if you'd rather) in ... -
I've heard these called "tonsil lithes" which basically means tonsil stones. Apparently some people get them from time to time and others don't. My understanding is as follows; it has to do with the shape and condition of your tonsils- some people have small, smooth tonsils and other people have very large or deeply scarred/wrinkled tonsils- mine are large...

ARCHIVED Best Flour For Stews, Fried Chicken, Etc
catfish replied to j9n's topic in Gluten-Free Recipes & Cooking Tips
You should be able to make it using the same method as before. I would suggest instead of regular rice flour, if you can find an Asian market near you, try "glutenous" rice flour (also sometimes called "sweet" rice flour). It is really niether sweet nor glutenous, but it is a much better flour for most things in that it is not gritty like regular rice... -
Take a look at this thread, it's pretty much the same topic. Open Original Shared Link General consensus is that there's not much that can be done, aside from maybe some peppermint or chamomile tea and rocking back and forth quietly wimpering in pain. Not terribly helpful, but for now that's about all we have.

Bad doctor, Bad! IBS is a diagnosis of exclusion, which means that it is supposed to be diagnosed only when everything else has already tested negative; that is to say, your intestines appear to be physically "normal" but you still have symptoms. All possible indicators of Celiac. Bruising can be a problem if your body is unable to absorb enough...

I don't think IBS can develop into Crohn's, but it can mask it or be misdiagnosed from it. The symptoms are pretty much the same, so often an IBS diagnosis will later turn into a Crohn's diagnosis, but only because it wasn't correctly diagnosed the first time. At least that's my understanding of it. For some of those touchy symptoms, I find this IBS...
