Millet and amaranth were once thought to be a source of gluten, but they have since been given the "all clear" and are now considered safe for celiacs. Perhaps the list you read was using antiquated information. -

I have also been losing weight rapidly since starting the gluten-free diet, and I didn't have a lot of weight to spare starting out. I don't know how well it's working yet but I've been going on a "anti-Atkins" diet. I snack on carbs all day long. I make gluten-free snickerdoodles, rice pudding, eat Pamela's chocolate chunk cookies and spend hours each... -
I have the same problem, sometimes it collapses and sometimes it doesn't but I haven't yet figured out why. I am going to try cooling my bread and cake slowly in the oven to see if that makes a difference, otherwise I'm not sure what could be going on.

A lot of people have good results with this, in fact Caltrate makes a product called "Colon Care" or something like that which is nothing more than megadoses of calcium. Sherquilts, I also experienced an increase in bloating and gas due to the fact that I was eating so much more fruit than before the diet. I have just cut that back and it has helped. You won't hear any complaints from me about Outback! All I had to do was mention to the waiter that I have Celiac and his immediate response was, "Oh, let me go get you the gluten-free menu!" It was absolutely painless ordering the food and there were no screw-ups at all. If more restaurants were so accomodating this lifestyle would be a cinch!

I just had a birthday and I made a gluten-free key lime pie for my own birthday instead of cake- it was no big deal since I love key lime pie much more than cake anyway. I've been gluten-free for almost 2 months. I agree that it takes some getting used to, but some things like cake I just need to have "smooth". And things like cookies which have a fairly "dry" batter to start with turn out so gritty that they taste more like they came from the sand box than from the oven- I simply can't eat them. -

I'm not sure how a recipe exchange works, but I would love a pineapple upside-down cake recipe. It is really the only type of cake that I actually miss very much. I used to make them all the time, so all I really need is a batter mix that doesn't taste gritty. -
If bananas cause this, then I would look at fructose as the culprit. Bananas are very low in insoluble fiber so that is unlikely to be your main problem. Fructose intolerance is a lot like lactose intolerance in symptoms- gas, bloating, even diarreah. Jen-schall hit the nail on the head! Rice + beans = complete protein amino acids. This can be enough to sustain you almost exclusively. I asked the same question once, and surprisingly the answer is NO, they are NOT gluten-free. They have malt flavoring in them and that is a no-no. I found something at my health food store called Honey Frosted Flakes that are gluten-free, they taste exactly like regular frosted corn flakes but with no malt flavoring added and are actually less expensive... -

You're definitely not the only "man" on this board! I had the IBS dx for so many years, I also had to "suck it up" and deal with it. My wife seemed to get so irritated when I was too sick to go somewhere, like I was intentionally ruining her fun by being ill. Never mind that I was not only also missing out on the fun myself, but also writhing in pain.... -
All I can say is that I've never seen a salad bar that didn't have Bacos in the shredded cheese and croutons in the chopped eggs. People use those tongs interchangeably and stuff gets dropped everywhere, so it is very likely that there is some contamination going on there.
