Pasta, pasta, pasta. I crave this constantly and I have found all the gluten-free substitutes (at least to my pallate) pretty substandard. I would love to find something that tasts like real pasta, but nothing I've tried does. Oh, well. The other thing I crave is cheesecake, since I'm also lactose intolerant. I found a good milk-free key lime pie...

ARCHIVED Imodium Surpose To Work Good?
catfish replied to lyndszai's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I was misdiagnosed with IBS and suffered severe symptoms for many years, and Immodium was my only crutch. To put it simply, it works. I thought I was slowly becoming resistant to it because as the years went on I needed to take more and more to have any effect, but it turns out my intestines were just getting progressively worse. Immodium has been shown... -
ARCHIVED If They Came Out With An Anti-Gluten Pill Thingy
catfish replied to celiac3270's topic in Introduce Yourself / Share Stuff
Being lactose intolerant and having tried those Lactaid tablets I have to say that they only work a little bit some of the time. The treated products like Lactaid milk are fine, but the problem with the tablets is that the enzyme just doesn't have enough time to work in my gut. From the time that I ingest the lactose to the time that I have symptoms is... -
I think people misunderstand what it is to have a "Psychosomatic" response. It actually may very well be the case here, but that doesn't mean that it's "all in your head". The word means that mind and body are connected, and what affects the body affects the brain and vice-versa, sort of like ulcers can induce mental anxiety and mental anxiety can exaccerbate...

ARCHIVED Trace Amounts Of Gluten Acceptable
catfish replied to MichelleC's topic in Publications & Publicity
I think that they need to consider a second label for "low gluten" foods that may fall within these levels, as clearly they shouldn't call it "gluten free" if it isn't... -
ARCHIVED Malt Flavoring
catfish replied to Ashley462's topic in Gluten-Free Foods, Products, Shopping & Medications
Just to simplify, I wrote to Kellogg's and they told me that NONE of their cereals are gluten-free. To GinEva; have you considered the possibility that it is something else in the mix causing your bloat? Those instant potato mixes with cheese or sour cream flavorings have many times more lactose in them than a regular glass of milk. Often times I have... -
ARCHIVED Vce - Video Capsule Endoscopy
catfish replied to lisabarella's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
You might check out this IBS forum, here is a thread about this procedure from a recipient's perspective, she posted from the day she swallowed the pill until the test was completed; Open Original Shared Link And here's another discussion about it; Open Original Shared Link Good luck! -
What about lawn mowing? Well, lot of lawn grasses are in the rye family, and mowing creates a huge mess of debris. I have always broken out in a sort of minor rash on my arms or other exposed areas after mowing the lawn, although I of course never connected it to possible wheat intolerance before. Might this be related or am I just being nutty?

I talked with my GI doctor and while the visit began with her (actually my main GI's assistant" trying to convince me that I needed to go back to eating wheat so they could get a biopsy, by the end of the visit I convinced her that the only sensible thing is for me to continue my gluten-free diet for a few months and see if I continue to improve. The way...

ARCHIVED Anyone Not Super Careful About Cross Contamination
catfish replied to MichelleC's topic in Coping with Celiac Disease
According to my GI doctor different people have different tolerances and different reactions. Some people who are gluten intolerant can eat a piece of bread each week and maybe only get a little gas the next day, whereas others can eat a single crumb and immediately get violently ill. I think you will only know how careful you need to be based on your own... -
ARCHIVED Cd And Irritable Bowel Syndrome
catfish replied to glutima's topic in Related Issues & Disorders
Well bearing in mind how many people are thought to have IBS it is also likely that many people actually have Celiac and IBS at the same time! Whether the IBS is caused by Celiac or whether some people would still have IBS symptoms even if they never had Celiac, so in any given case the fact that a gluten-free diet may not show improvement does not rule... -
Training your brain is a great way to put it! I'm a stay at home dad and I take care of my little girls, and they are always trying to feed my a cookie or put a fruit loop in my mouth. It's great that they want to share and I'm so used to just humoring them that now I have to catch myself each time and say, "Oops, nope, can't eat that!" Eventually I will...

ARCHIVED Celiac With Siblings
catfish posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My next oldest sister has IBS symptoms similar to my own, younger brother gets terrible migraines, and my oldest sister can't gain weight plus I just found out from my mother that my oldest sister was taken of wheat when she was an infant because she had a bad reaction to it, but then the reaction went away so they put her back on it again. Add to this the... -
ARCHIVED Making A Gf Roux For Alfredo Sauce, Etc.
catfish posted a topic in Gluten-Free Recipes & Cooking Tips
So many good things require a roux, such as creamy soups, sauces and the like. I was worried about whether I'd be able to do this without wheat flour. But my first experiment turned out really good- smoother than regular roux in fact! I simply mixed 2 parts millet flour with 1 part potato starch, then use this like normal flour to make roux as in these... -
I was looking for people's feedback on which gluten-free pasta is the best/most like regular pasta. I tried the corn type, it was too mushy and tasted funny, stuck to my teeth. The rice pasta is too rubbery but it's better than the corn. I miss pasta more than anything else, any ideas of what I should try? I saw some Quinoa pasta but wasn't sure if...

ARCHIVED Jello Or Pudding
catfish replied to AmyandSabastian's topic in Gluten-Free Foods, Products, Shopping & Medications
I don't know about other brands, but I have found that Jello brand instant pudding (not the kind that needs to cook, I haven't tried that) will set even with plain water although it tastes a little bit flat. Also, the mix has no milk in it. I imagine almond milk would work just fine with it. -
ARCHIVED Celiac Vs Celiac Sprue?
catfish posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My GI wants me to schedule a biopsy where they use a scope to view my my small intestines and collect the biopsy with the scope. The nurse said something about gliadin levels but when I talked to my doc he mentioned antibody levels, and the nurse said he wants to "rule out" Celiac Sprue. I know they want to look for flattened villi in any case, so is there... -
ARCHIVED Gf Bakery In Colorado?
catfish replied to catfish's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks KellyR, I did an online search by that name and found their website, it looks like they sell a lot of different kinds of bread. I'm looking for a good sandwich bread, is there anything that you would recommend for that purpose from there? Thanks again. -
ARCHIVED Gf Bakery In Colorado?
catfish posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I thought I read somewhere on this forum that there was a gluten-free bakery in Colorado Springs. As I will be visiting down there sometime this week I thought I'd like to visit it, but now I can't find where I read about it! Anyone know what I'm talking about? -
ARCHIVED Dinners/lunches?
catfish replied to MySuicidalTurtle's topic in Gluten-Free Recipes & Cooking Tips
I think I know what you mean, I've been looking for more recipes that just don't use gluten instead of recipes that are substitutes for gluten-containing foods, right? There are lots of pizza crust, pancake, cake recipes etc. but I really prefer to use food that doesn't have any gluten in it normally because then I don't feel so depressed about how second... -
ARCHIVED Help With Baking Cakes
catfish replied to justmel74's topic in Gluten-Free Recipes & Cooking Tips
I usually make my own mayo, it's incredibly simple, and if I were to use it in a cake recipe I'd simply leave out the vinegar and spices. To do this simply blend an egg and slowly add vegetable oil until it gets thick and forms peaks. That's all there is to it! -
ARCHIVED Jello Or Pudding
catfish replied to AmyandSabastian's topic in Gluten-Free Foods, Products, Shopping & Medications
Jello Instant Pudding is safe; also, since it is a Kraft product, I read that all Kraft products will specify on the ingredients lable if a wheat product is used. I haven't checked the non-instant varieties but I know the instant mix is okay, although the buttterscotch flavor does list caramel color and doesn't state whether it is from barley or not. Will... -
ARCHIVED Blood Test Positive
catfish replied to catfish's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Well it's only been 4 full days since I started a gluten-free diet, and I am already noticing incredible improvement! If I'd known something like this would make me feel so much better I would have done it long ago! I don't think I could ever think about eating wheat again if it means feeling as rotten as I have been, I really forgot what it was like to... -
ARCHIVED Kellogg's Pops
catfish replied to AmyandSabastian's topic in Gluten-Free Foods, Products, Shopping & Medications
I wrote to Kellogg's and they told me that at this time none of their cereals are safe for a gluten-free diet, as all of them either contain wheat, barley, or malt flavoring. Sorry... -
ARCHIVED Help! So Close To Quiting
catfish replied to lyndszai's topic in Coping with Celiac Disease
I am also lactose intolerant, but I have heard that if I remain gluten-free and my symptoms abade I might be able to slowly "wean" myself back onto moderate amounts of lactose. This makes sense to me because basically the damage caused by the gluten (protein chains) has caused my guts to cease functioning properly in many different respects. I'm hopeful...
