ARCHIVED Anyone Ever Made gluten-free Fortune Cookies?
gfjayhawk replied to gfjayhawk's topic in Gluten-Free Recipes & Cooking Tips
Thanks for the replies. I'm happy to hear that we can make authentic cookies from cornstarch! If we don't have success with that, then we'll start experimenting. My son has already made up the fortunes, but he won't let me read them.... -
ARCHIVED Anyone Ever Made gluten-free Fortune Cookies?
gfjayhawk replied to gfjayhawk's topic in Gluten-Free Recipes & Cooking Tips
The only recipe we have is a conventional recipe using wheat flour. We were going to try converting it. I'm just afraid it may not hold together well enough. -
ARCHIVED Anyone Ever Made gluten-free Fortune Cookies?
gfjayhawk posted a topic in Gluten-Free Recipes & Cooking Tips
My son wants to try making fortune cookies using a gluten-free flour mix and some xanthan gum. Have any of you tried this, and if so did it work? -
ARCHIVED Will My Body Ever Realize That I'm Not Starving Anymore?
gfjayhawk replied to gfjayhawk's topic in Related Issues & Disorders
I don't have the labs right now ... will have to ask the doctor. How likely is it that I suddenly developed thyroid issues at the same time I went gluten-free? -
ARCHIVED Will My Body Ever Realize That I'm Not Starving Anymore?
gfjayhawk replied to gfjayhawk's topic in Related Issues & Disorders
Thanks for the replies! I have had my thyroid checked, and everything came back normal. My BMI used to run around 19, while it's currently 24.5. I'm eating a healthy diet, though I could probably eat more vegetables. I'm trying to limit refined carbs and focus more on protein, fruits and vegetables. I can tell that I am a bit more muscular than before... -
ARCHIVED Will My Body Ever Realize That I'm Not Starving Anymore?
gfjayhawk posted a topic in Related Issues & Disorders
I had severe malabsorption issues for many years before diagnosis. Despite having the celiac belly, I was still quite thin. Since I have gone gluten-free (about 10 months ago) I've gained quite a bit of weight. I'm not eating more, but my body seems to be wringing the most out of every single calorie. Has anyone else had this issue, and did your body... -
If there's ever a board update, it would be nice to be able to view the posts you've started or replied to, without having to go back and track them. I miss that feature too.

ARCHIVED Gluten Free Dog Food Again..
gfjayhawk replied to Yenni's topic in Gluten-Free Foods, Products, Shopping & Medications
I was reading some dog forums lately, and many people were complaining that their dogs had bad reactions (gas, diarrhea) to the new Canidae. Sounds like the change in formula was a bad idea for several reasons! Our dog eats Natural Balance Duck & Potato. (Another grain free option is their Venison & Sweet Potato formula.) It cleared up his chronic... -
Penzey's has a gluten free taco seasoning too. It's lower in salt than many taco seasonings are.

ARCHIVED Cover Girl Cosmetics
gfjayhawk replied to celiac-mommy's topic in Gluten-Free Foods, Products, Shopping & Medications
That is ridiculous. It's not as if we could duplicate their product based on that one little piece of information! And even if we could, an industrial spy could easily pose as a doctor to get the information. Their policy makes no sense. -
ARCHIVED Galvanina Blood Orange Sparkling Fruit Drink
gfjayhawk replied to gfjayhawk's topic in Gluten-Free Foods, Products, Shopping & Medications
In case anyone else needs to know, I've heard back from the company, and this product is gluten free. It's also known as Italian Soda, and it's quite tasty. -
ARCHIVED Galvanina Blood Orange Sparkling Fruit Drink
gfjayhawk posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I picked up some Galvanina blood orange soda at Costco today. Everyone else is enjoying it... I'm waiting to hear back from the company whether it's gluten-free or not. Has anyone had experience with this product? -
ARCHIVED Grant To Develop Wheat Free Of Harmful Gluten Proteins
gfjayhawk replied to ENF's topic in Publications & Publicity
I'm skeptical about this as well. The problems of cross-pollination and contamination with gluten-containing wheat will be very hard to solve. Also, wheat has been bred to develop high levels of gluten because of gluten's special characteristics. Cooking with gluten free wheat would be an entirely different experience, and I'm not sure that people who... -
ARCHIVED Warning - Freak Gluten Contamination In Store.
gfjayhawk replied to ArtGirl's topic in Gluten-Free Foods, Products, Shopping & Medications
Yikes! Thanks for the warning! I hope they are conscientious about cleaning it all up. -
ARCHIVED Our Waitress Had Gills
gfjayhawk replied to OBXMom's topic in Introduce Yourself / Share Stuff
It's funny what can induce people to share things about themselves, isn't it? -
ARCHIVED When "gluten-free" Really Isn't
gfjayhawk replied to CaptainObvious's topic in Gluten-Free Foods, Products, Shopping & Medications
You're right, but it is frustrating that they chose to use the term gluten free when the product contains gluten. Their "logic" makes my head hurt. -

ARCHIVED Dark Circles Under Eyes And celiac disease?
gfjayhawk replied to motif's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I've also heard they're a sign of allergies. Mine have gotten less noticeable since going gluten-free, but they haven't completely gone away. -
ARCHIVED 1 Week Gluten. Enough For Positive Biopsy?
gfjayhawk replied to MELINE's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I was gluten-free for two months, then went back on gluten for a week right before my biopsy. In my case, there was a lot of visible damage, and my biopsy came back positive. I had severe malabsorption problems, so I suspect that I still had damage from my pre-gluten-free days. Every person is different, so it's hard to say what your biopsy will show.... -
ARCHIVED New To This Board, Need Help
gfjayhawk replied to miche's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Sorry to hear you're so miserable! I hope the doctors figure out the problem soon. Keep us posted on what you find out! -
ARCHIVED New To This Board, Need Help
gfjayhawk replied to miche's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
That doesn't sound like coincidence. I'd encourage you to try staying on the diet longer to see if it helps. I was never dxed with fibro, though I've had muscle pain for years. I went gluten-free after having a positive blood test, then went back to eating gluten when my doctor insisted on doing a biopsy. I immediately started having burning pain in... -
ARCHIVED What Types Of Reactions Do You Get When You're Glutened?
gfjayhawk replied to blondebombshell's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I get a severe, burning pain in my midsection (duodenitis), muscle spasms in my back, nausea, and later abdominal cramps and sometimes D. I also have fatigue and brain fog. -
ARCHIVED Gluten Free Popcorn Seasonings
gfjayhawk replied to gfjayhawk's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks for the replies. I did get a brief reply back from Dean Jacobs, telling me the popcorn cheese didn't contain gluten. I'm a little leery of possible cc, which they didn't address. So unless they can reassure me about that, I'll keep looking for substitutes. I fear that having celiac disease has made me a wee bit paranoid. I'll have to try the... -
ARCHIVED Gluten Free Popcorn Seasonings
gfjayhawk posted a topic in Gluten-Free Foods, Products, Shopping & Medications
We used to buy Dean Jacob's popcorn cheese, but I haven't been able to confirm whether it's gluten-free or not. (I've emailed them, and am waiting to hear back.) In the meantime, do you know of any other good popcorn toppings? My kids are very fond of cheesy popcorn, but I'm not buying anything that's not gluten-free. -
ARCHIVED So, I Am About To Gluten Myself...
gfjayhawk replied to gfjayhawk's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Wow, 1.5 months on gluten sounds like a nightmare. I hope your biopsy comes back positive. Since you are so miserable, I have high hopes that it will. I'm convinced I've had celiac for my whole life, too. I'm not sure how long it will take to really heal my insides, but I suspect it will take a long time. I really hope the medical profession comes...
