  3. I am bringing my family to Seattle next week. We will be staying either down city or in Renton. Is there one of these anywhere nearby? We will be heading to Mt.   4. A month or so ago I made some zuchinni (am I spelling that right?) bread that was great. My DD loved it. All I can remember is that it called for applesauce.   7. Oh, yeah. I made this after my morning hour run, and it was great. I used 3 T sugar, and cooked just 3 minutes. May cut back a little on the time. I also realized I forgot the oil, but it seemed just fine. Over the years I have often cooked scrambled eggs in the MW, and they puff up all by themselves. I think I will experiment with this.   9. Yep, I checked and it was the corn/rice version. It is in a book titled "You won't believe it's Gluten Free". Perhaps I will try the version you use and remember to put in the vinegar. I have been hesitant to try anything else from this book because I hate throwing food out. Perhaps I'll try the applesauce bread this weekend and see what happens. Walt
  10. My wife got me a big gluten-free cookbook by Roben Ryberg. Last night I made the corn/rice version of his pizza crust. After I stuck it in the oven I realized that I forgot the 1 TB of vinegar.   12. Here's what I ended up doing. It was very good but not quite what I hoped for. I am my own worst critic. My wife and son ate it and liked it. I layered sliced russet potatos, bacon, and slices of red onion. I tucked little pearl onions from my garden around the layers and then poured some chicken stock over it.   17. I checked out the LOL site yesterday, and promptly made the chocolate-chip cookies. Best gluten-free cookies I have made by far. The biggest problem is trying to stop eating them.   20. Thankd for all the input. I think eventually I will get to a gluten-free house. And, since I was in the store when I picked up the flour, I was unable to wash my hands. At home I always wash after touching something with gluten in it. I suppose that was the problem. That was Monday, I and Im starting to feel better today. Walt

  22. Just saw this and thought I'd add my ideas. I frequently ride 60-80 miles and take along my homemade rice-krispie type treat. I use Erewhon brown rice cereal and whatever else I have. I throw in coconut, raisins, chopped nuts, crushed Rice Chex. I wrap them in plastic wrap and store in my Bento box on the bike. I can take one out, unwrap and eat while riding...
