  1. How's this for a polenta experiment. I cooked one pan of white and one yellow untl they were very thick. Then put in loaf pans and chilled. I then sliced them lengthwise and used the slices to make butternut squash lasagna for my daughter. She loved it.   3. Check out other Asian markets. I have started buying tapioca, potato, rice, sweet rice, and sweet potato flours at a local market. The brand I get is made in Thailand and I have had no adverse reactions from any of it. Most is a buck or less per pound, versus $3-4 dollars at the health food store Walt

  7. I di not use anything for the egg replacer. I have used the bvread for a couple sandwiches and with just butter on it. It is a lot of work but good. The book is The Gluten Free Gourmet Revised Edition. It is a paperback. Good luck!

All I know is that when I eat even a trace of gluten, I get symptoms ranging from cramps and very bad gas to terrible D.   20. On Tuesday I ate some suspect oatmeal. Bad cramps and gas started that afternoon. I figured I would be all better the next day, but it was not until today that I feel like my insides are back to normal.
