  1. In Gluten-Free Baking Classics, Annalise mentions that McCann
  2. My suggestion would be to follow a very strict gluten and dairy free diet for at leasst a few weeks. However, you you feel you want a diagnosis backed up by medical tests, then you should continue eating gluten until you have the tests. My blood and biopsy were both negative, but I have never felt better since going gluten-free. All of my intestinal problems...
  3. Have you had this response more than once? The reason I ask is that a couple times in my life, I have had a very similar experience. The last time was a couple years ago. I ate a peanut butter sandwich and headed out for a bike ride. A few miles from home I got a horrible pain behind my rib cage, although mine was a little bit to the right. It got progressively...
  4. My wife is somewhat the same. She is very supportive, since our daughter and I both have celiac. As an example, on Saturday I went to have some cottage cheese, and grabbed a plate that was sitting on the counter. There were some crumbs on it, and I was not sure if they were from the gluten-free toast I made, or the non-gluten-free that my son had. I decided...
  5. I'm not sure if I have posted this before, but I made them yesterday, just ate a few leftovers, and want to share. Take dried plums, wrap each with some prosciutto, put them on a skewer and grill until the prosciutto is crisp. You can also do it in the oven at 450 for about 15 minutes. The plums are very good for you, and most of the fat in the ham cooks...
  6. Sylvia's has a gluten-free menu? Wooooohoooo! Thanks for that info. I'll be back there soon, I hope. Walt
  7. You are welcome. My GI wanted to do a small-bowel x-ray, but I declined. She mentioned the posibility that my issue could be Crohn's or ulcerative colitis. If everything I ate gave me a problem and I had no family history of celiac, maybe. But all I know is that a gluten-free diet makes me feel great. That's enough for me. She also suggested the gene testing...
  8. A few years ago I developed little red spots on my stomach. My doc just said "Hmmmm". After going gluten-free, they have disappeared. I don't know about them being DH, but they are gone now. Walt
  9. Right on all points. I think I will post my history here and then copy into the post about histories. I don
  10. Oh, man. Now I really can't wait for my next NYC trip. I bet I have walked by the place on Bleeker Street. I wish I had this list a couple days ago. We stayed at 14th and 3rd. Would have been a short walk to S'mac. I was planning on staying on West 77th next time, so I'll try Sambuco for sure. Thanks a million! Walt
  11. I made these over the weekend and they were very good. A lot of ingredients is the only drawback. Also, I wanted to use up soime powdered buttermilk I have, so I used that. I ended up getting them too watery, which I do just about everytime I use the powdered stuff. I prefer buying real buttermilk and will the next time I make these. I also think I will reduce...
  12. I made this on Saturday. I think I cooked them too long, because they were a little dry. I will try again because they did taste very good. Walt
  13. Oh, yeah. I like that carrot cake. Next up I am going to try the chocolate muffins and chocolate-chip cookies. Walt
  14. Last week I mentioned that I was in NYC and webnt to a famous soul-food restaurant in Harlem called Sylvia's. I ate corn-bread and some vanilla wafers there and paid the price. I was in NYC for the last three dayas, and this time I decided I would see how difficult it would be to stay true to my gluten-free diet. I brought a bag of mixed nuts with me as...
  15. Out of respect for Annalise (and copyright laws), I will not post it, but I highly recommend buying the book. I got it from Amazon for about $13. It is Annalise Robert's Gluten-Free Baking Classics. Everything I have made from the book has been top-notch. Walt BTW, I whipped up some real cream this morning and had another piece of pie. MMMMMMmmmmmmmmmm
  16. I was at my mom's last weekend and she had made a strawberry rhubarb pie. I really wanted some, but I did not eat it. She gave me some rhubarb, and I picked some berries from my garden, and last night made a gluten-free version. I used the pie crust recipe from Annalise Robert's baking cookbook, and it was fantastic. I really think I like her crust better...
  17. Darn. That must be me as well. My head hurts, I get all jittery, and it lasts all day. I used to get jittery if I drank too much caffeine, but the headaches are new.
  18. HAHA. I agree. I have never been a big coffee drinker, and in fact have usually gone a couple days a week without coffee just so I did not get addicted to it. However, I used to be able to have a few cups with no ill effects. Now a couple cups makes me feel sick all day. As for beer, try Redbridge. I'm geting to really like it. For pizza, I really like...
  19. OK. I can live without gluten for the most part. I am getting used to the gluten-free bread I bake, and I like the gluten-free beer, Redbridge. One thing I have noticed since going gluten-free is that caffeine really seems to affect me more. I have one cup of coffee now and I get a headache and the jitters. I really enjoy coffee, and can get by with decaf...
  20. I know I am being foolish. It is just one of those things that is not easy to fully accept. The first few times I kept thinking "maybe it was the salad I had with dinner, or maybe it was the green beans, etc" I am getting there. Thanks for caring Walt
  21. Thanks for the info. I'll look around and see if I can find a market with products from Japan. I think I too will avoid the Chinese varieties.
  22. I flew to NYC yesterday for a meeting, and had a few hours to kill before my flight home. So I met my brother up in Harlem at a place called Sylvia's. I guess it is Bill Clinton's favorite place to eat. I decided to see what would happen if I ate the corn bread, and then I had banana bread pudding for dessert, which contained vanilla wafers. About an hour...
  23. I keep reading how much cheaper rice flours are in Asian markets, and sorghum flour in Indian markets. So, I stopped in a local Asian market and I see that everything they have comes directly from China. I'm wondering about quality control, what with all the news lately about contaminated products from China. I'm getting used to paying a lot for my flours...
  24. HAHAHA I just noticed that your recipe says 10" pan. Duh. Next time I'll pay more attention before asking a dumb question. I'm going to make it right now. I rode my bike 75 miles today, and this looks like a great way to ingest some calories. I still have some real whipped cream I made for my pancakes this morning, and that should be a good topper for...
  25. This cake looks great! I was looking for something sweet to make today. I'm hoping I can get my daughter to come over for dinner. I plan on Chilean sea bass and this might work for a dessert. I have one question. What size and kind of pan? I know in Annalise Robert's baking book she is very specific about the correct pan for each type of cake. Thanks...
