  1. Great timing! I was just going to post and ask about gluten-free salad dressings. I just got back from Whole Foods and Trader Joes and everything says "made on equipment that also processes wheat". I'll give Ken's a try. I like most of them anyway. Walt
  2. Welcome to the gluten-free world. It took years for me to find out what was wrong. Here are a few of my favorite things that helped me. Like others have said, avoid processed foods like the plague. Cook a baked potato in the microwave and top with one or all - cottage cheese, shredded cheese, salsa, broccoli, chili Make fried rice - stir fry some peas...
  3. Yep. Don't feel bad. I spent years thinking it was normal to have cramps, gas, D until my daughter was diagnosed with celiac disease and I started researching it. Since going gluten-free, I am amazed that it took me so long. Years ago I told my doc I had bad cramps and gas, and he just said "Hmmmmm". My blood and biopsy were negative as well, but I have no...
  4. Thanks for the ideas. I don't think it's dairy. I regularly eat cottage cheese and yogurt with no problems. It could very well be something my son ate before the chips. He is 17 and eats everything in sight. Thanks Walt
  5. Thanks for the tips. I would like a stand mixer, but don't want something else on m y countertop. I'll check the Bosch, and also look at a Cuisinart hand mixr. Just about all the chefs on the food channel use that one. And, I think my GE came with dough hooks. I'll have to see if I can find them. Before gluten-free, I just used my hands to make dough :-)...
  6. I'm fairly new to the gluten-free world, and doing well so far. However, last night I got home and my son was eating Tostitos bite size corn chips and salsa. I looked at the ingredients for both, and had some. Today, I had the big "D" twice, so I figure I must have gotten some gluten. The Tostitosd web site lists these chips as gluten-free. I suppose it could...
  7. When I am in the mood for something sweet (most of the time), I make a version of the old standby rice-krispie treat. I use what ever gluten-free cereal I have on hand. I like the Erewhon brown rice the best, I add chopped almonds, chopped walnuts, raisins, coconut, chocolate chips, or whatever else sounds good to me at the time. I cut them up and wrap in...
  8. I love to bake, and now that I am gluten-free, as is my daughter, I have been trying different recipes for us. I just made Mistilyn's sorghum bread, which I really like. However, when using my mixer on gluten-free recipes, the dough will climb up the beaters and even go into the holes at the top. It makes a horrible mess. I have a GE hand mixer. Should I...
  9. HAHA. This your DH sounds like me. I kept trying to blame all my digestive rpoblems on something else. "Must have been the beans, must have been the BBQ, must have been the salad, etc...". My wife liked to say that air gave me gas. I finally started paying attention to when I had D, cramps, bloating etc, and it was always after having something with gluten...
  10. The day I finally decided to eat gluten-free, I had bad cramps and gas. It was so bad I was probably "passing gas" at least several times a minute. The next day, I started a gluten-free diet, and it was like somebody turned off a switch. I could not believe the difference. All my other gastric issues went away just as quick. So, yes, results can happen...
  11. Hi David, I have been trying to gert on the Celiac Society of Ireland website but my wife accidently deleted the reply from the webmaster with my activation link. I tried your wrap recipe, and while I liked it, I had a hard time with them breaking. I'll try again. A question for you; when your recipes call for milk powder, is it the kind that is very fine...
  12. Thanks for that info, doc. I'm in agreement. At this point I don't care about the celiac diagnosis, but I do care about my red blood cell issue. I gave more blood last wek for folate, b12, and the full CBC panel. Waiting for that result. I'll LYK them when I get them. I just posted a topic about the "stool" issue. I also think about all the other things that...
  13. OK. I won
  14. Yes, I have decided to continue eating gluten-free. It can be a challenge, but I do most of the cooking in the house and enjoy it, and my daughter is very happy that I have joined her. A funny side benefit is work-related. I sit in meetings a large portion of my day. Before gluten-free, I was always embarassed of the noises my intestines were making. Now...
  15. Long story short; My daughter was diagnosed with celiac disease after a positive blood test and negative biopsy. That was three years ago. After years of abdominal cramps, bloating, gas I started having intermittant diarrhea. In addition, after years of normal blood tests, my red blood cell count, hematocrit and hemoglobin levels were all below the normal...
  16. Wow. If my math is correct, this research suggests that I should have been eating 6-10 slices of bread per day. I may have had that much total in the 4 weeks before my blood work. I wish I had known this before. Of course, if I had eaten that much, I might have given up before the test. As it was I was growing tired of the constant churning in my intestines...
  17. I find this a very interesting thread. My daughter was tested a few years ago with negative biopsy and positive blood. In January of this year I finally grew tired of constant cramps, gas, and intermittant diarrhea. I also had very low RBC counts the last two years, which concerned me since I am a serious marathon runner. So, I went on a gluten free diet...
  18. Good luck with your biopsy. I had mine on the 14th, and just got the results. They said it was negative for celiac. However, I have stopped eating it since the biopsy, and my symptoms are gone again. Like you, I had bloating, cramps, gas, intermittant diarhea, and low RBC. My blood tests were also negative, but I am staying gluten-free since when I eat it...
  19. That seems to have been the case with me. Long story short; After years of cramps, bloating, multiple BR trips a day, loose stools, gas, etc. I decided to try a gluten-free diet. My daughter had been diagnosed with celiac disease a few years ago. The same day I started gluten-free, my symptoms disappeared. I was amazed. It was like someone threw a switch....
  20. I also wonder the same things. I have recently started the journey of finding out what causes my symptoms, and why sometimes I can eat bread with no reaction and other times I get a bad stomache ache, cramps, gas, etc. That's a mystery to me. What isn't a mystery is how much better I felt when I ate gluten-free for a month. I am 50 years old, and I did not...
  21. Me too! I just got back from my endoscopy. Doc said everything looked fine except for something in the antrum campatible with mild gastritis. I will get the biopsy results in two weeks. My blood work was all negative. My daughter has confirmed celiac disease. All the tests don't matter to me, because as of now I am going back to a gluten-free diet. I tried...
  22. Just saw this post and maybe I can help. I'm a decent marathoner (sub-3 hours at 50 years old), and am in the process of getting tested for celiac. I ran one in Austin, TX in Feb while eating gluten-free. I called and found a local place that served both white and sweet potatoes (as you already know, Outback has them, too). I bought a couple extra with my...
  23. Afetr years of having abdominal bloating, cramps, and gas, I decided to find out why. My daughter was recently diagnosed with Celiac, so I went on a strict gluten-free diet. My symptoms disappeard instantly. I went to her GI doc, and was told that it sure sounded like Celiac, but she said I had to eat Gluten for 1 month in order for any tests to work properly...
  24. I guess I am hoping that it is not gluten causing my intestinal distress. I am a very healthy eater all of the time, and I love to cook and bake. My daughter is thrilled that I am trying this, and it is helping me to understand what she deals with on a daily basis, trying to eat gluten-free. Funny story. My running partner of 5 years has grown used to...
  25. Hi! I'm new here, and not yet sure I even need to be here. Let me explain. After 1.5 years of constant diarhea, my daughter was diagnosed with celiac disease. She had a biopsy that was negative, but a positve blood test. Last year I decided to get tested. My blood test was negative, so I thought I was OK. Since then my sister thinks she might have...
