How's this for a polenta experiment. I cooked one pan of white and one yellow untl they were very thick. Then put in loaf pans and chilled. I then sliced them lengthwise and used the slices to make butternut squash lasagna for my daughter. She loved it. Next time I will add a couple eggs to it and see if they hold together better, although they were fine... -

Check out other Asian markets. I have started buying tapioca, potato, rice, sweet rice, and sweet potato flours at a local market. The brand I get is made in Thailand and I have had no adverse reactions from any of it. Most is a buck or less per pound, versus $3-4 dollars at the health food store Walt

Jeez. After reading all of these I almost feel guilty about what happens to me. I usually get bad gas and cramps a few hours after getting glutened, and usually have D the next morning, followed by up to a week of loose and multiple stools and some intestinal discomfort. I di not use anything for the egg replacer. I have used the bvread for a couple sandwiches and with just butter on it. It is a lot of work but good. The book is The Gluten Free Gourmet Revised Edition. It is a paperback. Good luck! -

Yep. Very confusing. Same thing with me. Doc said biopsy showed mild gastritis. They only grabbed one spot of my duodenum, and it looked normal. All of these replies sound like me. I have decided that I don't really care for an official diagnosis. All I know is that when I eat even a trace of gluten, I get symptoms ranging from cramps and very bad gas to terrible D. I can live with the symptoms, and did for many years, but my life is a lot easier now without feeling the need to run to the bathroom... -
I made these last night, and I had to bring them to work today to get rid of them before I ate every one all by myself The best part about these was eating the batter that was left in the pan. If you like chocolate, you will like these.

On Tuesday I ate some suspect oatmeal. Bad cramps and gas started that afternoon. I figured I would be all better the next day, but it was not until today that I feel like my insides are back to normal. When I first started eating gluten-free my symptoms went away quicker than that. I hope they don't last this long every time I get gluttoned! Walt

Success! I made two batches last night. The first I used Betty Hagman's bean flour mix for the flour, and baked it in big muffin tins. My plan was to use them for a breakfast sammy.
