So if you have gluten sensitivity your body will produce antibodies that can be detected, but only after you've been eating gluten daily for 4-6 weeks. So simplify this, anything with "gluten-free" on the label should technically be gluten-free. For things that are not labelled that way look for "Contains Wheat" in the allergen statement at the end of the ingredients, because in the USA they must disclose this.
