  1. I would like to add a little bit of advice... Don't get discouraged by initial negative results, especially if it runs in your family and you have symptoms. My son was diagnosed 2 yrs ago, but my mother and I have had intestinal issues all our lives, but when I went to get tested, my blood test was negative... However, the doctor said that the blood test...
  2. I don't know this for sure but I think maybe if you are only sensitive...... maybe you could have a little bit now and again. But if you are a Celiac, then No Way Jose! I don't know where one would draw the line, because it sems like anyone with an allergy or sensitivity is porbably just an undiagnosed celiac anyway, but only you can decide for yourself...
  3. Here is my vinaigrette recipe that can be adapted to easily fit anyones taste: 1/2 shallot , minced 1 - 2 cloves garlic, minced 1 tsp dried herbs of your choice OR 1 Tbs fresh herbs of your choice 2 Tbs red or white wine vinegar, try to use a good quality brand 1 tsp lemon juice 1tsp dijon 3 - 4 Tbs olive oil Place all ingredients in a jar or...
  4. Just curious... are you a diet soda drinker? if so, I know that the aspartame found in most diet soda actually makes the body crave carbohydrates... which seems so ridiculous to me because that defeats the enitire point of drinking diet soda. If you are it may be a component of your cravings, I have also lost weight since going gluten-free, but I never...
  5. There are several topics regarding oats and you will find that there are lots of mixed feelings about them among the folks on this board. I read a study about them not too long ago and it seems that McCann's is the only brand tested that had 0% gluten in the oats, Quaker had 0.006% gluten contamination. Hope this helps... oh, I also feed them to my son...
  6. Have you ever tried freezing spring rolls? I'm wondering because I never have, and I would think that the skin would become very chewy after freezing, I could be wrong though. Believe it or not, I am actually working on an egg roll wrapper that we can use for wonton, potstickers and lumpia. With and Asian husband, we can't live without these things...
  7. The easiest thing for me is just to bake a loaf of bread, slice it and remove the crust, then I let it dry and process it n my food processor, it gives really nice "panko like" crumbs. You can toast the bread to speed up the process, but that adds color you may not want. The great thing about making crumbs this way, it that you can uses the bread that...

    ARCHIVED Acne

So..... does anyone have any miracle cures for this acne problem?
  9. Hmm, there are differences between celiac disease and gluten/wheat allergy. It seems to me that digestive issuses are more common with celiac disease and for that you might consider a gastroenterologist rather than an allergist. Whereas skin issues and other allergy type reactions (hives, breathing difficulty etc.) are more common with wheat allergy, and...
  10. Lots of folks here on this board eat McCanns without any problems at all. I have used them for my celiac disease son and he has also been fine. The easiest way to figure it out is to give it a try, but go with McCanns only, they are the only ones that are completely gluten-free.
  11. Yikes! That is really expensive for rice flour! Just as an option, have you checked your local Asian market for rice flour? I buy mine in 1 # bags for 99cents and it's the best flour I have found, smooth, never grainy. You might give it a try, it's cheap and my son has never had a reaction, neither has any of the celiac disease folks I have cooked for...
  12. I have to say, I think that Sarah has an extremely valid point. Just consider all the symptoms related to celiac disease that have no connection the the digestive system, like hair loss, acne, miscarriage, brain fog, bone loss etc., etc. If her theory can be disproved then I would like to know how. Because in all the research I have done, I have never...
  13. I fail to see the problem with eating gourmet... but then, I cook for a white table cloth restaurant, so I guess I'm not exactly objective I do like the rational thinking of 120$ a dinner working out to 20$ a week, maybe I'll try and use that on my husband next time he says we can't afford it Anyway, I hope everything is working out with you...
  14. Not to worry, these are typical problems for the first time gluten-free baker, and even some of us who have baked many loaves still find that this happens now and again. The easiest thing to try first is to decrease the cooking temperature (usually between 300 and 325) and increase the cooking time (by 30 minutes or more). gluten-free breads cook better...
  15. Hello all, please do us moderators a favor and put topics that relate together. For instance if you have responses from a few companies about gluten in the product, they can all go under the same post rather than a new topic for each company. Please keep the information comming, just help us to keep the board nice a tidy. Thanks so much!
  16. TVP or textured vegetable protien is the main thing used in meat alternatives that you need to avoid. I believe that textured soy protien is questionable as well. What exactly are you looking for, hot dogs, burger patties or a ground meat substitute? I use tofu a lot in place of meat, though I am not a vegetarian. I also have used a mixture of beans and...
  17. For most of those items you are good. Be careful with the pudding though, some have a modified food starch in them that is not gluten free... usually the instant ones are the ones you need to avoid. Also premade fries can be dangerous, as well as the cheese, if its pre-shredded, but Mariann is right when she says that if it's block cheese it okay. ...

    ARCHIVED Feeling Weak

Not to get you down, but for some it can take several weeks, months and a few can even take up tp a year. It really depepnds on how much healing your gut needs to do. You may take a while to heal, but you will probably begin to notice the positive effects of being gluten-free long before your healing is complete, maybe even very soon. When my son went gluten...
  19. I read a study not too long ago... I think on celiac.com, that gave a percentage of gluten contamination for different brands of oats. The only two I reemember are the ones that are most common in my town: Percentage of gluten contamination of oats: Quaker Oats 0.006% McCanns 0% Don't take this to mean that you will not have a reaction, some people...
  20. 1. Male 2. Eurasian (mom/caucasian dad/chinese) 3. Age 1 @ onset & dx 4. 18# before 24# after 1 yr 5. Dr diagnosed via blood test, no biopsy 2001 6. ??? too long ago to remember 7. No, just the gluten, we got lucky 8. No 9. About 4 months of symptoms before dx 10. None other in the family have been dx'd yet, but there are 3 others that...
  21. As far as I have read and researched oats are okay, as long as they come from an uncontaminated source... and tarnalberry is correct, that's pretty much McCann's and that's about it. There are a few here on this site who say that they still have probalems with oats, but I think there are even more who enjoy them on a regualr basis with no problems. I feed...
  22. You got it... nice pic too
  23. Wow! Mariann thanks for the great list!
  24. Wow... I almost bought a bunch of the EnviroKids snack stuff for my son last week, but it was so expensive I decided against it. Now hearing all this about possible contamination, I am glad I put them back on the shelf. My son eats Mothers Peanutbutter Bumpers cereal without any problems, and love them. The box doesn't say they are gluten-free, but there...
