Don't feel bad, I'm not sure how I did the salad bowl thing either... dumb luck I guess. Re: the Amish comment, I wasn't making fun, I really do know a few who could run computer circles around me . But I still recommend calling yor computer manufacturer to figure out the cookie thing. Most computer companies put a sticker on the back side of your hard...

That Amish thing won't work on me, I know a few who can handle a computer better than I can. As far as disabling or enabling your cookie function, most of the computers i have worked with are different so my instuctions might be wrong for you. But it's usually in your computers system setup, then you have to look for something dealing with your security...

ARCHIVED Help! A Sick Celiac!
kejohe replied to a topic in Parents, Friends and Loved Ones of Celiacs
"Real" rootbeer comes from the sasparilla root doesn't it? That root has been know to make some sensitive people quite gassy, so maybe that's where the "root" of the problem is... Ha Ha, just my stupid humor sorry to subject you to it. Anyway, joking aside, rootbeer often causes lots of people to expirence gassy problems, maybe to the hypersensitive of... -
I agree that the best way to channel our frustration is to educate the non-celiac world. For me, since I am not in the medical profession, I have little opportunity to speak with health care pros about the disease. However, I am in another industry very important to those with celiac and thats the food service industry. So for me, I try and educate as many...

It works for me. Do you have your cookies disabled? Some of the features on this site don't seem to work properly when you have cookies turned off, so that might be what's happening. The other thing you can do to find posts by a certain member, is to click on the members name in the member list, then it will give you the option of displaying all posts...

ARCHIVED Will Cooked Salmon Freeze Well?
kejohe replied to LisaP's topic in Gluten-Free Recipes & Cooking Tips
Salmon is much easier to freeze when its raw. The problem is in the protiens, when you cook a peice of fish, it denatures the protiens so that they can no long retain their "springyness", freezeing does the same thing, to an extent, so when you cook and freeze the fish becomes very mushy and not very pleasing to the palate. However, very short freezing... -
I'm sure I could try. I have been working on a gluten-free skin for wontons anyway, and I'm sure they would work for these as well. The Chinese use a skin/wrap made with tapioca flour that is used for steamed sui mai, a meat filled dumpling, but most recipes usually still include a small amount of wheat flour. I just recently got a tortilla press that I was...

I have heard lots of good things about Saras Challah bread recipe but I havent tried it yet, here is another recipe, but I'll admit it works better in rolls than it does for loaf type bread. I also use the Asian style rice flour, it's a finer grain so you never get the gritty texture, but it does make the bread look a little lumpy, however it tastes fantastic...

Okay... I'll admit, I am a professional chef, but I don't have any idea what that is, Pierogi. Does it go by another name? What culture is it from and what ingredients are used? If you have a recipe, even if it's not converted to gluten-free yet, I might be able to help you figure it out. And even if not, I'd still like to know more about it, I love learning...

ARCHIVED Degenerative Disk Disease
kejohe replied to txceliacmom's topic in Related Issues & Disorders
Oh, I forgot to mention... bone loss is one of the common symptoms of celiac disease, so it wouldn't seem out of place to consider DDD as just one more of the myriad of other issues that can accompany celiac disease. -
ARCHIVED Degenerative Disk Disease
kejohe replied to txceliacmom's topic in Related Issues & Disorders
My blood test for Celiac disease came back negative, but my son has a confirmed dx, so I know it runs in our family. That said, I will tell you that I have degenerative arthritis in my lower back, and I am only 26 years old. Also, now that you mention it, I must say that since my son was diagnosed and our family went gluten-free, I have had tremendous... -
ARCHIVED Yogurt
kejohe replied to lauradawn's topic in Gluten-Free Foods, Products, Shopping & Medications
Gelatin is actually a byproduct made from the bones of cattle, and it is gluten free. However regarding the yogurt, I have found that most "plain" yogurts are gluten-free, but you need to check with the manufacturer if there is any modified food starch that doesn't specify if it's corn, rice or tapioca. Also some natural flavors are not gluten free. I believe... -
ARCHIVED Skin Prick Test?
kejohe replied to plantime's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My sons ped did a blood panel and said, at first, that it was an allergy to wheat. I went home did a bunch of research on wheat allergy and came up with lots of info on celiac disease. When I went back to the doctor and asked him about it, he never actually said "your son has celiac disease" but when I asked staight up "Is my son a celiac" he nodded yes and... -
ARCHIVED Please Help!
kejohe replied to a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Celery is one of the more difficult veggies to digest because of the cellulose (the stringy stuff) and I think maybe that if you are still in the recovery stage of the gluten-free diet, it may cause you some problems. But I also agree with Sarah that it could be a cross contamination issue if you share the same peanut butter or even use the same utensils... -
I second that, my son had positive blodd test and complete recovery on the gluten-free diet, so his doc decided the biopsy wasn't necessary and I am very thankful. I wholeheartedly believe that recovery on the diet is the biggest indicator for diagnosis there is. Feel better soon!

Yeah, I was pretty chatty too, my story was about three times longer than Peter originally recommended, plus I put my cinnamon cookie recipe in there. But he said it was exactly what they were looking for, so I hope everyone else enjoys it too.

Dessa, Your posts makes me smile for two reasons, one becuase my dog, Piglet, has always had stomach issues too, but I always thought she was allergic to beef, so I give her only lamb and rice dry food and she does great. However the idea of our pets having celiac disease would really reinforce the notion that perhaps gluten is toxic to everyone and...

ARCHIVED Celiac Human Interest Story For Newspaper
kejohe replied to faithladene's topic in Publications & Publicity
Well, I think it's really important to begin by covering the facts of the disease, what it is exactly and how often it is misdiagnosed. The numbers often scare people who have never heard of the disease, but the reality is that you can overcome it if you are conscientious about maintaining a strict diet. I have found the most common questions I am asked... -
There are several of us on this board who have contributed stories to that book, including Jessica, Shirley, Stacie, and myself. I can't wait for it to hit the shelves, my whole family is waiting to read it, both for the stories and for the educational information. I think it will be fantastic! Hope you all enjoy it!

ARCHIVED Mayonnaise
kejohe replied to S-EBarr's topic in Gluten-Free Foods, Products, Shopping & Medications
Hi Connie! I have never tried making mayo using a whole egg, I was taught by my chef/professors that it wouldn't work because of the albumin in the whites being a different consistancy than the yolk. However, I have found them to be wrong an a few other issues as well, though not tt many. It sounds more like a salad dressing mix because you talk about getting... -
ARCHIVED Calling All Gf Cooks!
kejohe replied to kejohe's topic in Gluten-Free Recipes & Cooking Tips
Well... I have to finish writting it first, but it's nearly there! After that, it goes to print and then you will probably be able to get it anywhere you would buy cookbooks. And I am counting on you to buy it! -
ARCHIVED Help! A Sick Celiac!
kejohe replied to a topic in Parents, Friends and Loved Ones of Celiacs
For some celiacs, they can tell 15 minutes after they ingest gluten that they have had an accident. But for others it can take a day or more. My son sometimes won't begin getting the symptoms until maybe 24 hours later, so lokk a couple days back and see if it might be easier to pinpoint the problem. Also remember, even though you buy "unseasoned" meat... -
ARCHIVED Elimination Diet
kejohe replied to bob's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have never tried it myself, but have had many celiac disease friends who have had to go on an elimination diet. The common theme seems to be that you need to keep a strict diary, start by cutting out everything but the basics that you KNOW are okay cold turkey, then adding back foods, one at a time. If you add one at a time, you can easily pinpoint the... -
I have heard, but have never seen it on any medical information, that sometimes condoms , or the residue they leave behind can be very irritating to a womans "sensitive" tissues. Someone once told me that if your man uses condoms and you have intercourse regulary, you will have worse cramping during your period, supposedly because your body is basicly trying...

ARCHIVED Is Msg Gf?
kejohe replied to tammy's topic in Gluten-Free Foods, Products, Shopping & Medications
MSG is on the most recent "SAFE" list for celiacs. Remember too, that other products like rice and corn also have "gluten" it's just that those gluten grains are not harmful to celiacs. The key is figuring out which product use corn or rice gluten and which one use the bad stuff. But for the most part, I have found that the rice and corn gluten is listed...
