ARCHIVED Vh Soy Sauce
kejohe replied to tagger's topic in Gluten-Free Foods, Products, Shopping & Medications
I have never seen that brand here where I am, but it's a pretty small city. However, i have come across a few other gluten-free brands of soy sauce San-J makes a really good tamari soy sauce, and a low sodium variety too, which is great for those of us with a high blood pressure. My husband is Asian and he loves it, says it tastes just like the regualr stuff... -
ARCHIVED Macaroni And Cheese
kejohe replied to Cait6799's topic in Gluten-Free Recipes & Cooking Tips
Here is a good one, and it can be easily adapted with different types of cheese depending on your preference. Also, just to keep your options open, you might want tp try some of the Asian rice pastas, I buy the elbow noodles and the spiral noodles as well as shells and regualr spagetti and it also taste like the "real" thing. Cooks up nice and fast too. ... -
ARCHIVED Anyone Ever Been To Disneyworld?
kejohe replied to wendyspi's topic in Traveling with Celiac Disease
I just saw an article about dealing with special diets in disneyworld and they mentioned the efforts and programs in place for dealing with special needs, including celiac... I nned to find the article and I'll get back to you. But I remember it said some very, very good things about it. -
Thanks for the reply Scott, but the post are not listed by date, at least not when I log on. Rather they are listed by pinned status, listed by date, then at the end are the unpinned topics, these are in order of most recent post date, but are still listed at the back of the pinned topics, that is my concern. I don't mind the pinned topics, I just want the...

Hi All, This isn't really related to anything celiac, but I though it might be fun to pass around fun ideas for things to do with our kids for Valentine's Day. We printed off our own cards for my son to hand out in his class and this website Open Original Shared Link has some really cool cards and gift tags, they also have templates for making your own...

Nathan, Well, I'll be honest and say that I have never had better luck than when I make my bread by hand. For me it seems to take less time as well, I can mix, rise and bake of a loaf in 2 hours and some of the machines take more than a few hours to get the job done. But, don't take my honesty as a "give it up" on the contrary, there are lots and lots...

ARCHIVED Anyone Have A Corndog Recipe? Or Onion Rings?
kejohe replied to filititi's topic in Gluten-Free Recipes & Cooking Tips
Hmmm..... I don't have corn dog one yet, but I bet I can find one. Give me a few days and I'll get back to you. For my onion rings, my hubby likes em' pretty straight forward. I season dry rice flour with salt pepper and maybe a little garlic, then toss in the onions or shallots. Deep fry just until golden and yumm yumm. They don't have the thick... -
Hi Romans828, According to my baking manual from school, dry milk powder is used specifically to add flavor and fat, so I would guess that if you bump up the fat just a little, you may be able to get away with subsituting with plain rice flour. BUT, here is a more concrete suggestion.... it comes right out of one of Bette Hagmans baking books. ...

Sorry, I didn't want to sound so negative, I really do like this new board better than the old one. I also realize the motive behind pinning the topics, but I do hope the format can be changed to make it more sensitive to post date rather than if its pinned.
-
I don't think I like the pinned topic format anymore. It was ok for a while, but now that we are filling up all the catagories, there are too many new topics that are getting shuffled to the back because they are not pinned. I posted a recipe in the gluten-free baking, cooking tips & recipes section, but it got shoved to the last page. I realize that...

Well... I am a chef, and most good restaurants have a head chef, or executive chef who doesn't actually cook (most of the time), so if you want to thank them, just tell your waiter that you would like to speak with the chef in order to personally thank him/her. This has two benifits, not only can you give them a sincere thank you, but because you do they...

Okay folks, here is one I made this evening that I mofified from a regular non-gluten-free recipe and it is sooooo yummy! Definately not a low cal/fat snack, but who cares?!?! Chocolate Peanut-Butter Layer Brownies 6 oz semi-sweet chocolate, chopped or use chips 2 sticks butter (1cup) 2 1/2 granulated sugar 6 large eggs 2 tsp vanilla 2/3 C rice flour...

ARCHIVED Root Beer Softdrinks
kejohe replied to culpusa's topic in Gluten-Free Foods, Products, Shopping & Medications
Hi Jim, I can't answer all of your questions but I can help you with a few. First off, the offending ingredients can be found in several forms, artifical flavors, natural flavors, caramel color, barley malt or extract, and also in modified food starch, one or all of these can be found in some rootbeers. I have found more diet rootbeers that are safe than... -
Hi Brooke! That sounds just like my son, when he has night terrors, he will hit anything within reach as hard as he can with his feet and hands and wakes up with black and blue bruises all up and down his arms and legs. His teachers probably think we beat him! Anyway, it's funny that you say your hubby jokes about being sleepless for years, mine does too...

ARCHIVED Color Of Stools With Children Of Celiac Disease
kejohe replied to celia's topic in Parents, Friends and Loved Ones of Celiacs
First things first.... welcome to the board and you are NOT a terrible mother, in fact you are the opposite because you are doing what you can to get your baby better. My son was diagnosed at a year old and is now 3. He had very watery and very, very foul smelling stools, they were light in color and so loose they ran down his legs, or up his back. However... -
ARCHIVED Anyone Else's Show Up After Surgery?
kejohe replied to Aimee's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I'm not saying that celiac disease can just happen overnight, but there are some specific situations that can make it more obvious that something is wrong, even if you thought you felt fine. For my son, he was always big for his age, and no one would ever accuse him of wasting, but he suffered from colic, frequent vomiting, more that just spit up, he never... -
ARCHIVED Frustrated And Really Pissed Off
kejohe replied to AntiGluten's topic in Coping with Celiac Disease
Lee, I can't say that I know how you feel, but I can sympathize. My son, now 3 y/o and he is just becoming aware of the fact that he can't have what all the other kids have. I try my best to give him foods that look and taste like the other kids foods, but then I worry that he will get confused as to why he can't share, or accept when the other kids want... -
As luck would have it I used to work for Princess as a bartender when I started culianary school. I worked on the train up here in Alaska and I can tell you that as long as they know in advance what you need, they do their best to have it before you get there. I also remember reading something on the old board from a gal that had just gotten back from a gluten...

ARCHIVED Anyone Else's Show Up After Surgery?
kejohe replied to Aimee's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi Aimee and welcome to the board! My son was diagnosed with celiac disease shortly after he turned 1 y/o. His case was unique because he originally had no symptoms, at all. When he was about 10 months old, we took a trip down the Alaska/Canada Highway and stayed in one really raunchy motel, where Bryce contracted staph infection in the form of lesions... -
ARCHIVED Flavored Yogurt
kejohe replied to soul04's topic in Gluten-Free Foods, Products, Shopping & Medications
Last I heard Cascade brand was also gluten-free, but my son eats the dannon and the yoplait without any issues. -
ARCHIVED Coping With Kids' Gluten Accidents...
kejohe replied to seeking-wholeness's topic in Parents, Friends and Loved Ones of Celiacs
Hi All! I heard not too long ago that the drug companies were working on a possible pill for gluten intolerance that acts much the same as the "lactaid" you mentioned above. Apparantly, it helps ease the symptoms that occur when you have a gluten accident. The FDA is taking a look at it now and considering it for release on the market as an over the counter... -
ARCHIVED Cornbreads and muffins
kejohe replied to lucycampbell55's topic in Gluten-Free Recipes & Cooking Tips
Hi All! I just wanted to add my 2 cents about the Asian market, I LOVE EM! I haven't bought Bob's Red Mill or Arrowhead Mills since I discovered the Asian Rice flour. I use it for everything and it's so smooth, so if you have noticed that a lot of the other flours have the gritty texture, try the Asian fours. They are usually sold in a 1# bag for anywhere... -
Hi there, It depends on what kind of recipe you are using. I find that for most baking, if you are using a tried a true recipe for the first time (like one of Bette Hagmans) it's best to use what the recipe calls for. Now that I have had the chance to expirement for more than 2 years, I find that I use tapioca starch more often that I use flour. I have...

ARCHIVED Question About Food Stamps...
kejohe replied to littlemonkeys's topic in Gluten-Free Foods, Products, Shopping & Medications
I checked with my hubby abou the SSI assistance, and he mentioned that if you or your hubby are military veterans there are VA benifits that may help you. Also state funded energy assistance and/or housing assistance that may halp pay for your other bills so that you can save more money for your food costs. He also mentioned that if you are on medicaid...
