I thought at first that it had something to do with the last dated posting on the topic, but if that was true, wouldn't they be shuffled to the back so the new ones are at the top of the list? I was also told to stay away from all pre-shredded cheeses because they are tossed in flour to prevent tham from sticking together. I just buy blocks and shred my own, and my celiac disease baby has no problems. Last I saw MSG (monosodium glutamate) was ok for celiacs, or at least it was listed on safe list on this sites homepage. In any case, MSG is no good for you anyway, it's basically a chemical, and it's meant to bring out the flavor in foods, sort of the same as salt. It's very high in sodium, and can really comtribute to high blood pressure. Hope this... -

Hi Stacie, I try to make my own bread when I have time, but I also like kinniknnick too. My son eats and loves both the white sandwich bread and the tapioca bread. There is a white Italian bread they sell that isn't too bad, I uses it for garlic toast when I make pasta. Both the white sandwich and the tapioca bread hold up ok when toasted for sandwiches...

I should have mentioned earlier that when I substitute potato flour for starch in a cookie recipe, there is usually a combination of flours, as it is in most gluten-free baking. I have never tried to convert potato flour by adding anything to make it more strachy. But i have used potato flour as a straight across replacement for potato starch in some things. My in-laws sent me a menu from a restaurant called "Corbetts" in the Portland, Oregon area, that has a menu that is mostly gluten-free, and each menu item is clearly labeld Gluten Free! Is that cool or what. Unfortunately I am in Alaska, and can't go and check it out, but if any of you try it let us know how it is! It's a fish and chips type place.
