  1. Whatever you make try to freeze some so you can have meals already made. You could contact a church in your area to see if they could help too. Premake alot of meals now and put them in bags so you can just cut them open with a knife or scissors later. I think you could do spaghetti. Use a spaghetti sauce in a jar and you may have to hold it between...
  2. No, I wouldn't try it. The blog I was reading said to use low protein flour and Pam's has almonds. I think the safest is white rice like RissaRoo posted. I did try a "gluten" brownie version that I liked way better, no eggy taste or texture but its not gluten-free. It was easier (only 1 minute) and really gooey like hot brownies. I gotta try to convert it...

  4. I love chocolate but otherwise I was thinking the same thing. Tweak this if you want to: 5 T. Carol's sorghum mix (sorghum, tapioca and potato starch) (maybe just use sorghum and tapioca) 1/8 tsp. xanthan gum 3 T. brown sugar (plenty sweet) 1/2 tsp. ground flax 1 egg 3 T. milk 3 T. oil splash vanilla The flavor was great but it rose...
  5. I agree with the sorghum. Eatingglutenfree.com has a soft batch (for chocolate chip) cookies recipe that you add a box of pudding with the rice flour and they are good.
  6. How funny. Last night I bumped into another 3 minute mug cake recipe in a little cookbook someone gave me. It needs a big tweaking to be gluten-free and easy. You are supposed to use an electric mixer with it. Its white like an angel food cake. I never would have looked at it if you hadn't posted the chocolate mug cake recipe.
  7. I am headin for the kitchen. Well my watts are 900. Sharing it...I am glad no one is home. Be back in a few with the results.... P.S. what a cute idea, my dd will love this at her apartment...THANKS whether it works or not! RESULTS: Fastest cake I ever made. Very chocolatey and I love chocolate. It makes alot. I used a big, wide soup mug...
  8. If you make them 2 or more inches, a bit thicker and play with it you will get a "Ding Dong" for sure (mmm... kids lunch treat). The pic makes me want to eat them. They are actually smaller than what the pic shows. I made them thicker the first time just guessing (in the pic)and thinner the second time (1 1/2 level tsp. of dough)with less frosting, stayed...
  9. How funny, I am doing that right now for bean with bacon soup (b/c I didn't have any "pizza" left) so we can eat it after church tomorrow. If you are interested, I posted the soup recipe on Sept. 3rd. Fast and easy!
  10. I always make 1/2 recipes with new ones to try them. I wish now I had made the full thing so there would be some left for tomorrow. Yup on those hashbrowns!
  11. It would be easy to adjust to so many different allergies/tastes. The crust needs the eggs though to get it to puff up. Sorry you can't have cheese but rice milk would be fine. You could add some shredded hashbrowns to it or put a thin layer of mashed potaotes on top of the meat instead of the cheese. Believe me it IS good.
  12. If you want to make your own waffles and have a waffle iron then try these: Open Original Shared Link Banana Nut waffles. It makes alot so you could freeze them or cut the recipe in 1/2.
  13. This original recipe is from Pillsbury, Casseroles & One-Dish Meals. It is not a gluten-free recipe so be sure to use a gluten-free flour with a bit of xanthan gum and gluten-free ingredients. (my alterations noted) Upside-Down Pizza Casserole 1 lb. ground beef 1 cup chopped onions 1 cup chopped green bell pepper (I used, red, yellow and...
  14. Thru the eyes of a child! What a positive way to look at it...I got tears when I read your story
  15. This forum is so nice. You have many experienced heads working together at a moments notice just to help one person and in doing so ...everyone reading-learns... and many more people are helped. Thanks everyone for helping everyone! Collette, I hope you never have that happen to you again!!!
  16. If it grows naturally and man took it and changed it into something else then its called processed. Its not in its original state any more. It could have chemicals, pesticides, preservatives, artificial flavorings/colors, etc. added to it. If it comes in a jar, box, bag or can it is probably processed. EX: Corn or potatoes become corn chips or potato...
  17. You are welcome...enjoy the fall...we have leaves on the ground now.
  18. YAY!!! I am so glad for you Shay!!
  19. I am still soo excited! I had to make them again today and tell you all the results. gluten-free Oreos!...mmm! I made them a little thinner than what shows in the pic. I got about 50 unfrosted cookies this time. Each dough ball was about 1 1/2 level teaspoonfuls of dough. I used 1 cup + 2 1/4 T. of flour and 5 T. of water. So much fun to have Oreos again...
  20. Sounds good and easy. Pic looks tastey too. I would have to skip the mushrooms and add a diff veggie. (I can't stand mushrooms ). Good for the crock pot. Thanks Collette! I still gotta try your lemon coffee cake. I am waiting for my dd to come home and share it with me.
  21. You sound tired... Perfectly ok...I used to work 12 hour days, 5 days a week and now I am not working. One extreme to the other. So now I have time to try new recipes and change old favorites. Actually these are easy, easier than sugar cookie cut outs b/c you don't have to roll out the dough. If you only need crumbs you can save the steps of the cookie...
  22. I just read something about arthritis and nightshades last night...maybe someone else knows more. Here it is: Open Original Shared Link
  23. When I use the regular wheat pasta and leave it too long in the crock pot it does get...whats the word...sloppy, soggy, flippy...I woudn't do it with the gluten-free ones. How about rice? Your last suggestion is what I was going to say. What if you just put a few cooked noodles in a bowl for your dh and he could heat them and dump the soup on top...leave...
  24. oops!!! so sorry...stuffing frosting should say 1/4 cup Spectrum shortening
