Yay! Thanks Fiddle-Faddle! I put into the egg replacer: the yeast, 1/2 the flax, some or the rice milk and used 1/4 tsp. extra baking powder. Oh and Allergygrocer said to use twice the egg replacer with wheat subs so I used 3 tsp. instead of 1 1/2. I used a metal pan and it all turned out like the normal kind. Karina has great recipes! My whole family loves her Breakfast Brownies. I put nuts and seeds in them with those healthy flours. I keep a stack in the freezer. Besides dark green leafies (dd only likes lettuce and broccoli for dark green veggies) what other veggies have lots of calcium? She is a picky vegan when it comes to veggies She's worried about getting enuff calcium so she takes supplements when she remembers. Thanks for the tips!

Everything sounds so good. I saw a spaghetti sauce recipe where they put whole beans in it. Ground up beans and veggies sounds like a good idea in place of meat. Gee, I haven't made mexican lasagna for years. Sounds like I want to make "new" lasagna again soon, as soon as I get some more gluten-free noodles. Thanks for some good ideas

On gluten-free mommy.com, she says that you need 1 cup gluten-free fresh bread crumbs for a 1 1/2 lb. meat loaf. Her recipe uses 1/2 cup dried crumbs for a 1 1/2 lb. loaf. So my dd wanted her gluten-free lasagna without meat/dairy. No spinach, squash, mushrooms or eggplant... I layered it with spaghetti sauce, the gluten-free noodles as usual. No kidding they are the original Tollhouse cookies so they have every chip and nut hand placed perfectly just for the photo or however they do it with cameras these days. My cookies didn't look like the ones in the recipe photo either...prob b/c I ground my own almonds. If anyone tries them be sure to make little ones. -
