Celiac.com - Celiac Disease & Gluten-Free Diet Support Since 1995

  1. I chose not to biopsy. The diagnosis path for celiac disease is 1) blood test, 2) biopsy, then 3) improvement on a gluten-free diet. I don't understand why it is better to perform an invasive procedure, involving sedation before trying a diet change. There are no other diseases that improves on a gluten-free diet. Or that proves itself, once gluten-free...
  2. I liked the entire article except the opener where the author described cooking for the family as a "logistic nightmare".
  3. My first reaction was: I can't eat anything! After a while I realized that there is plenty of food to eat, it's just not the same food. I was one of those people who always ate everything on the table and never put on any weight. My diet was mostly carbs. I reckon this was because my body was asking for all the calories it could get to maintain a modicum...
  4. Dr. Fine has stated that some people who continue with diarhea may have microscopic colitis. You might consider contacting him at EnterLab for advice.
  5. Frankly, I think there is a lot of hysteria surrounding pots and pans, etc. I'm as sensitive as the next person and I have had zero trouble with residual gluten in any storage container or cooking vessel. I am certain everything can be thoroughly scrubbed, including cast iron and wooden spoons, and made safe. We wash anything that contained gluten last...
  6. I like Bob's Red Mill gluten-free Hot and Tasty Cereal. Also, I've found polenta makes a nice hot cereal for a change. I like my breakfast cereal sweet so I add butter and maple syrup or brown sugar.
  7. It is not uncommon for some individuals to suffer all the symptoms of celiac disease, but fail to produce TtG or a positive biopsy. Dr. Kenneth Fine says he has observed this. Your doctor is trying to prove a "classic" case, where he requires you to have TtG and villous atrophy. You are in the gray area. Since you are producing antibodies, I would suggest...
  8. My thyroid went out about 15 years ago whilst undergoing severe stress. My gut problems began then too. Unfortunately, my thyroid was all that was diagnosed then. Fourteen years later, I turn up anemic and get diagnoses celiac. I recommend anyone with thyroid abnormalty to get tested for gluten sensitivity. The best method would be EnteroLab.

    ARCHIVED Vitiligo

I have it. I got a patch of it on my right shin about 20 years ago. Also, anytime I scar from a cut or burn, it turns white. Vitligo is an autoimmune disease and I've read that once you get one autoimmune disease, you as susseptable to others. I also have oral lichen planus.
  10. I think there are two components here. One I call "starving stomach". This is a physical manifiestation where your gut feels like you haven't eaten all day, even after eating. I had this for a few months and it went away. Just keep eating normal portions. The other component is mental. After eating everything on the table my entire life to feel nourished...
  11. When I manage not to poison myself for extended periods, I feel great; otherwise, I feel no worse than I ever did. I can tell you that it's really easy to get accustomed to feeling good, so an accidental poisoning can be a real downer. Regarding mental effects, my brain works better off gluten.
  12. Pre-celiac disease I was a beer afficianado. I traveled to Europe 8 times to drink sophisicated, craft beers from England, Wales, Scotland, Germany, France and Belgium. I felt like my heart was cut out when I had to give it up, and I still lament the loss. BUT - there are alternatives for the highly developed palatte in the form of imported cider, perry...

"Poison" is not a word most restaurant owners want to hear in association with their food. They get hot in a hurry!
